LUNCH: chopped salad (9 veggies) with added shrimp, an apple, and some Progresso Lite chicken vegetable soup.
DINNER: roast chicken, cabbage, northern white beans, toast+hummus and some yellow pepper. (There were 9 veggies at lunch)

still haven't gone food shopping since the storm. lunch was leftover pesto cappellini ($11 last night) with black pepper salmon (bought the fish this am, $4). dinner was a bread bowl of black bean soup from Panera. $7.
was possibly going to shop tomorrow morning, but am holding off pending the next storm tomorrow/Thursday. just in case we lose power again....

Last night: thin cut NY strip with baked potato and butter with sour cream. Ice water to drink. Cost was about $3 for everything.

[snip] Wed: Zatarain's jambalaya with sliced sausage. DH will eat the jambalaya, I'll have stand alone sausage. Cost approx $4.50 for 3 servings.Thurs: White Castle Hamburger Pie Cost approx $5.41 for 4 servings. Fri: Take out from? Sat: IDK yet. Leftovers probably. Sun: Something in the big city before a concert. I'll let DH pay since I paid for the tickets and hotel room. Next week it's our 17th anniversary of meeting each other. Man has time flow by! Monday's soup actually turned into more of a chicken and rice casserole. So instead of DH eating more rice tonight, albeit a different flavor, we'll have sausage and a side veggie. Total cost approx $3 for 3 servings. We will have take out from a new Italian restaurant this Friday.

I picked up a couple things this morning, since it's looking better about not losing power. either way, the insurance adjuster will be here Saturday if I end up having to pitch more. they are actually deliberately waiting til after the 2nd storm to come check stuff out.
so, dinner tonight will be a turkey and prosciutto sandwich with all the veggies, and that bag of chips from last night. cost, minimal. turkey was $4 for a half pound, prosciutto was $5 for 3oz. everything else was already here, veggies did okay with no power.

The taco and rice recipes were both from Budget Bytes. The rice one was called simple Mexican rice I think.

I'll update more after I talk to the guy this weekend.

dinner tonight was pork and veggie tacos with yellow rice, the leftovers of which will be the filling for some stuffed peppers tomorrow for lunch, and leftovers whenever. tasty! I think the pork was $5 for 1+ lb, not ideal, but nor'easter. the rice was $1.50, bought bc I wasn't sure if I had a box of Zatarains dirty rice, and I didn't. everything else was on hand.

Tonight for me will be like $2 for the drink. I have coupons to cover the rest. DH will eat at his work's happy hour or eat the honey mustard chicken I cooked last night. I have part of it for lunch today.
It's my dad's birthday Sunday so I'm leaving Friday morning. DH's sister is feeding him Friday night. He can figure the rest out.

I'm going to cook 1# of ground beef today. That should be enough for 3-4 meals and I'm thinking about taco salad each time. Have a lot of lettuce to use up and already have ingredients in the pantry to go along with making the salad. Cost wise, not enough to interest me in trying to total it all up.

Dinner was an big Asian ramen soup bowl, with red peppers, shrimp, mushrooms, lemongrass, a hard-boiled egg, avocado, sesame, etc.
It comes out different each time, depending on what I have in the fridge.
Love the stuff.

tacos here as well. I packed up 3 soft taco tortillas and some of the stuffed pepper stuffing, there was already a single-serve guacamole in the office fridge. oh, and a green salad with crunchy tortilla strips.

Ate out last night had chicken and dumplings with cole slaw and broccoli, new restaurant here with real home made food even mashed potatoes. Hubs had ham steak and baked potato. I am having to cook again, we have been eating out, I can see a couple of pounds up this last couple of weeks so got to fix that. Tonights meal isn't going to help though, beef with home made noodles, baked tiny potatoes with bell pepper and carrots. But it will be good. Thinking of also making a peach cobbler, found a recipe in my cook book, hand written that sounds good.
