At the request of a poster, I'm starting the thread originally started a few years ago by MarvHolly.
So, what's for dinner tonight, and if so inclined break down the cost involved.
Me, for tonight will probably be Popeyes Chicken. Cost will be whatever their special is, normally about $5.

I posted in the other one, but I'll sort of repeat.
I'm making black-eyed peas, a Southern tradition for New Year's Day. It is supposed to bring good luck. Previously, I've just cooked them in water with salt and some leftover ham.
This time I am trying a recipe that is much more involved. It has onions, bell pepper, bacon, garlic, ham, smoked sausage, etc. You are supposed to cook it in chicken broth, but I discovered someone had opened the carton I bought and put it back on the shelf. Yuk. So I had to stretch what chicken broth I had with water.
This sounds more like soup to me. Lol. When I eat red beans and rice at my favorite restaurant, the ingredients are similar. Its very soupy with rice in it rather than on top of it. I think I'll try this like that.
I probably spent around $8 making it. It is supposed to serve 9 so about $1 per serving. I'll freeze a lot of it to take for lunches to school.

Ropa vieja in the crock pot, which I cooked on Saturday. I can't wait for dinner. I don't know how much it costs, but not too much. I got the meat in sale a while ago. And ut fits in my Core diet!

Pork and Sauerkraut. Isn't that a thing everywhere? Its our 'good luck' new years day food. I'm guessing its probably Pennsylvania Dutch? I made the sauerkraut myself from CSA cabbage.

we will be clearing some veggies out of the fridge and doing a chicken stir fry tonight. maybe I'll use up the end of some soba noodles and clear that space out as well. cost? $0 chicken was left here last weekend when M didn't make buffalo chicken dip $0 rice and noodles have been here since who knows when $5 broccoli, bell peppers, bok choy purchased this morning. $0 green beans and onion that need to be used or pitched $?? sauce fixins. the hoisin sauce actually expires next week, so that got fished back out of the pile when I cleaned out the fridge earlier. lol.. $5 total

I'm packing up a cup of soup and a portion of spaghetti squash pie to bring to the office later. not sure which I'll have tonight, but i'll be eating both all week. here's the soup - "broke bean stew" and the squash pie - PaleOMG spaghetti squash pieI don't follow either recipe exactly, the squash pie turns into whatever meat/veggies I have a need to use up. this batch was half a bag of kale, mushrooms, yellow pepper and ground turkey. I had to buy black beans for the soup, I use only black beans and kale when I make it. I picked this soup b/c it used up almost the rest of the bag of kale that needed to be used up. cost of the beans - .79/can. Rienzi beans never go on sale.

Tonight is the last of the Chicken Chili Quinoa.
Tomorrow is going to be breakfast for dinner - I have a bit of ham and will do some eggs and toast to fill out the meal. I also want to make pancakes for quick meals at work.

Don't know of dinner tonight, didn't get to Popeyes last night and instead had a Jimmy Dean Breakfast Bowl. Lunch today is soup and grilled cheese. Will think about dinner later.

The broke bean stew sounds good. May throw that together later, well, except for the cilantro. I'm one of "those people" who thinks cilantro taste like soap. Thanks for sharing.

chiv..think I have everything but enough chicken broth...lol funny that you say that, bc I used my last carton yesterday. the soup called for 4c, which is a carton. when I package my own for freezing, it's in 1.5c containers because that's the volume I need for risotto. it just became habit.but a recipe.calling for 4c, I'll just pull a carton and be done with it.

Chiv, in rereading the ingredients, I'm not a big fan of cooked tomato chunks either, but I love Rotel tomatoes and green chili so I will likely double that (have those already along with beans). Cumin is another item I don't care for but red pepper flakes are always a winner with me.

had soup for lunch, so I'm packing up a portion of squash pie and a small Caesar salad for dinner tonight. over the course of my shift yesterday, I ate both the soul and the pie. MyFitnessPal said together they are barely 600 calories, so I'm okay with that.
costs - I bought romaine hearts last week, 6 for $3. I have probably half a.romaine heart, plus some shredded parmesan cheese. I'll crush some triscuits for crunch, and the dressing is already at the office.

Monday was leftovers. Last night: Beefy and Cheesy Low-Carb Ground Beef and Chile Bake (using 1 pound from a 3 pound multi-pack of ground beef and a can from a 2 pack Hatch pkg from Sam's Club) served with Skinny Baked Cauliflower Tots. I made the latter with almond flour in lieu of breadcrumbs and served it with chipotle mayo. I used frozen riced cauliflower ($1 sale, coupon) for the first time, rather than ricing my own. What a time saver! Total cost about $11 for at least 4 servings. There's a pork roast (Sale $4 and some change) in the Crock Pot for tonight. I'll serve with green beans (Sam's Club multi pack 0.80). Total pork servings at least 6. Thursday will be leftovers. Friday will be take out from? Saturday: Low Carb Pork Rind NachosSunday: DH will make beer can chicken (sale $6-ish) in the smoker. I'll make bacon wrapped shrimp (sale, e-coupon) for the side. I low carb! Have a fantastic rest of the week, everyone!

Tonight is going to be baked fish and roasted veggies with cous cous and salsa. Friday I am thinking clam chowder And I plan on making Rosemary Garlic Beef & Barley Stew from Budget Bytes for the weekend. Or it could all go sideways.

We are in New England so it's snowing like crazy right now. We're having Quiche Lorraine (bacon/onion/swiss cheese/eggs) with small salad. I love it, DH says it's not his favorite but he always eats a lot of it

I got home and saw boiled eggs in the refrigerator. So I chopped one up and made chicken salad. It really is more like "chicken-egg salad," but it is really good.
I had a chef's salad for lunch, so I'll put this on Publix reduced-wheat bread.
