I do have a Therma Pen but I'll need to get one with a probe. We have a kitchen place not too far away, so I'll run up there later today or tomorrow.

It is the "jus" that will be made. It will then be served "au jus" (with the jus).

Sorry. I can't help it. Forty years as a linguist made me powerless to resist. It's the tiny bit of high school French that I remember that gets me with that. I had an xbf that pronounced it/called it, "ar-jer sauce". I have no idea where he got that from.

I have been known to shriek obscenities at the TV when someone utters something like "and then (insert name of meaty food here) is served "with au jus," or "we make our own au jus" or something equally horrifying. It is usually on one of those shows where small restaurants or food trucks are visited and their proprietors are observed preparing their various specialties and demonstrating that they have no idea what the words mean that they are using to describe their food. They are often the same people who insist on pronouncing "mascarpone" as "MARscapone." Makes me despair for the future of humanity.

That was one of the reasons he's an x. I can totally forgive learning something incorrectly, but not to stubbornly refused to correct it when offered an explanation. I say that as a hypocrite, though, as I know now that I mispronounce gouda cheese, but don't like the throat clearing g sound.

Sorry. I can't help it. Forty years as a linguist made me powerless to resist. Sorry about what? Of course it will be served au jus. I did not wish to be a complete jerk by quoting the "make au jus" comment as it was not my intention to make anyone feel bad.
However, I was powerless to resist pointing out that it was the jus that would be made. I suspect that is the sort of thing that is is likely meaningless to normal people and making an issue of it is probably viewed as pointless and annoying. Hence, my desire to avoid offense.
