Tonight will be Budget Bytes beef and black bean tacos and a salad if I get home at a decent hour.
Last night's turned out well. I think we had too much olive oil on the veggies. With the oven being set at 450 and olive oil having a low smoke point, I think it was setting off the smoke detector. At least that's my theory. DH was tired of waving a towel at the smoke detector before the vegetables finished. They were very good though.

Last night was Split Pea and Ham from the freezer. Tonight will be brown rice and chicken which I will dress up with some roasted cauliflower and carrots.
Tomorrow is going to be cheese ravioli with pesto.
I am going to pull another container of soup for Friday.
Saturday is going to be enchilada pasta in the crock pot.

I picked up a bowl of chicken noodle soup from the grocery store when I went in for a few items. it's 26° here right now, that's soup weather.

6 of us ladies went to Mimi's after choir practice, I had the corn chowder with a small caesar salad. Brought the muffin home for breakfast this morning.

no idea what's on tap tonight. sis, parents and I will be going to a wake in my hometown, then going out somewhere that's safe for sis. I haven't been back to town to figure out what's around that she can have since she went even more restricted. I'll leave that up to her.

Deciding what to have and need to go out and get the rest of the stuff out of the car. I ate some potato chips because I was really hungry, now to figure out dinner. I think it will be the gnd beef I got on sale stir fried with some veggies. I'll try not to make a starch since I had the chips.

Got home realllllly late last night after staying after hours here at the office and then going grocery shopping. Ended up baking a DiGiorno crispy pan pizza for the first time (I asked DH via text to warm up the oven when I finished shopping). Not too shabby! I used an e and paper coupon which made it less expensive.
Tonight we're going out with a friend for dinner and a cocktail and exchange presents.
Tomorrow night I'll make the breakfast burritos we didn't get to last night.
Sunday we'll grill a ribeye. I'll also put a pork roast (on sale for $1.99 lb) in the Crock Pot Sunday which will make for quick enchiladas Monday.

tonight I'm going to be having the to-go container of food from the Brazilian place, plus a cup of rice I'll nuke from the stash in my desk drawer. marinated pork loin, a piece of bacon-wrapped chicken, and some amazing garlicky collard greens. the rice was 75 cents, the to-go container was probably $8.

I sauteed a pound of large shrimp in butter. Added mashed garlic, heavy cream, dill, red papper flakes, parsley and parmesan cheese. I had it over basmati rice.
The shrimp were $5.99. The rest of the stuff I had on hand.

Sunday meal prep day during football. I put a pork roast in the crock pot before brunch this morning. once done and shredded, I added bbq sauce to about 2/3 of the meat. around halftime of the late football game, I started a batch of stovetop mac 'n cheese. fontina, pepper jack, and mozzarella cheeses with sliced fresh jalapenos mixed in. there's plenty left for meals this week, in addition to the three portions of soup I pulled from the freezer yesterday. I need an easy week.
for dinner, I had a bowl of mac 'n cheese with bbq pork.

2 slices of pepperoni, extra cheese and mushroom pizza. I am debating eating the salad that I got with my steak tip dinner. I usually save the tips for the next day. I have plenty of pizza left over, as does DH.

Hope everyone had a fantastic weekend! Tonight: The enchiladas I mentioned Friday and serve them with fried eggplant, and leftover not refried beans from the freezer. Tomorrow night: Going out with friends for a drink and appetizer. Probably have something small when we get home. I (my agency) will probably buy my client friends a round. Total cost $70 or so, depending on who all shows up. Wed: An early Christmas dinner with Dad and the fam. Thurs: IDK yet. Probably leftover enchiladas. Fri: Take out from? Sat: IDK yet Sunday: DH is smoking a prime rib for the family. He bought it on sale for 50% off. I am so proud of him! We'll serve it with homemade au gratin potatoes, sweet rolls, fruit salad, a cracker and cheese plate, and brie stuffed puff pastry. My sister is bringing her yummy stuffed eggs, and my mom a veggie tray with homemade dip. I'll made a chocolate cherry torte for dessert. Cannot wait for it all. Christmas dinner: Probably leftovers. Christmas breakfast: The overnight French toast and homemade apple fritters I've made the past several years. Bring on the carbs! Have a fantastic holiday, everyone!

I woke up this morning with major symptoms of strep throat, and went to urgent care to get it checked out. quick test came back negative, but they took a 2nd swab for a culture. when I was a kid and caught this all the damn time, I very rarely hit positive on the quick test. so, I'm not totally reassured yet.
that said, I went in to work for normal time. I chatted with the boss about working from home (there is almost literally nothing going on right now anyway) while I wait for the results of the strep test. she actually physically wheeled her desk chair further away from me and said absolutely, get out before you infect the rest of us. um, okay. I am pretty sure I caught it from a colleague that had it last week. but I'm home now, and will be working from here until at least Wednesday.
dinner tonight, I decided to dice up the tomatoes that would have gotten pitched tomorrow with the garbage pickup. added garlic and red onion to make a bruschetta topping. tossed that with sauteed garlic chicken sausage and broccoli, and some small cheese raviolis. there's enough leftover for one more meal.

oh, but they are so good when baked the right way. crispy skin and all. I rub canola oil on it and some kosher salt.
I actually picked up some mild cheddar to make a cheese sauce. I already have broccoli in the fridge, and russets. that will be "brunch" when I get home in a little while. thanks for the great idea!

Sunday night we had grilled steaks, baked sweet potatoes and salad. The steaks were pulled from the freezer.
Monday night DH had leftover honey mustard chicken from Friday night's dinner. We also had leftover sweet potatoes and I made a new salad.
Tonight will be chiver's black bean chicken over rice and topped with cheddar cheese. I'm excited for this one as I have none of this in the freezer right now. Hopefully we have leftovers as it is the one thing I will gorge myself on.
Wednesday night will be appetizers at happy hour.
Thursday night I'm unsure of. I'm taking a vacation day so I'll probably make something.
Friday night is dinner out. We are having a surprise 70th birthday party for my MIL.
Saturday morning we leave for WV for Christmas.

I'm working from home again today. on the way back from picking the pups up from the salon, I stopped at the new neighborhood Thai place and got an order of chicken noodle soup. it was huge, I ate more than I needed to, and I still have leftovers. dinner tonight will either be some of whatever leftover option I have in the fridge, or I might do over easy eggs on scala toast. I picked up a loaf of scala bread this morning. yum!!

I stopped at the grocery store on my way home from CT, picked up fixings to make chicken chili. will likely have that simmering during the football game. today is likely going to be "pick at food all day" sort of thing. I just polished off a large chunk of sourdough baguette with olive oil, grated parm and spices. the pups "helped" with a slice of scale bread, dry, between the two of them. it's nice to be home

I am making chili with ground sirloin. I bought a smaller crock pot (4 qt.) and am trying it out for the first time. I have to make double portions when I use the larger one, which is ok but there will be so much leftover food after tomorrow. Anyway, I'm also sipping mimosas. I love days when I don't need to leave the house.
