I picked up a small container if cranberry walnut chicken salad at the market on Sunday, and it's still in the fridge. going to bring that to work tonight with one of the bakery rolls I picked up yesterday. have arugula and sliced onion and tomato, and chips as well.
chicken salad was $2ish, roll was 69 cents.

We went to 5 Guys last night after choir practice. One can only live on veggies and protein so long before the cravings for a good burger happen. And it was GOOD!.
Tonight, back to veggies and more veggies.

Tonight, back to veggies and more veggies. you can still do veggies at Five Guys. even with their limited menu, they offer a veggie sandwich - they will grill a portion of whatever veggies you can get on a burger, and add cheese if you want it. I think it's like $3something. that's what I get when I'm there.

taco salad tonight at the office. I still have a ton of chili pork leftover from Sunday. oops. maybe a taco salad for lunch tomorrow too!

I've been making an effort to add legumes into our meal plans a la The Anti-Alzheimber's Meal PlanThursday is probably leftovers. Friday-take out from? Sat and Sun, IDK yet. I served last night's chili in low carb baked tortilla bowls topped with the rest of the sour cream. I thought the chili was delicious. DH refrained from saying "It is what it is," but did accept leftovers for his lunch today. There aren't any other leftovers from this week, so I'm making breakfast for supper tonight consisting of corned beef hash and a few eggs. Total cost $2.50 for the hash. The eggs were free. Sunday we're having beer can chicken cooked in the Traeger. Saturday maybe tuna patties? Freezer proteins are dwindling. Monthly grocery shopping is next Tuesday.

did some stock up grocery shopping this morning, there were some crazy sales. I put a photo of the receipt with pre and post coupon numbers over on FB. basically I paid $92 for what would have otherwise been over $150. not bad! other than the fresh produce I'll use this week, I'm pretty well set on soup, carton and canned broth,
I am also trying to work through freezer proteins. so before I started unpacking the groceries, I set up the crockpot with black bean chicken. I used cut BSCB that has been in the freezer for who knows how long, and will be seasoning the hell out of it when I shred the meat.
cost is minimal bc everything was already here. two cans of black beans would be $1.25, the salsa was a milder one than what we normally like that someone else brought and left unopened, and the chicken was from so long ago. I still have fixins from tacos last weekend, but I had to refresh the stock of guacamole single serve cups ($4/6) today.
ETA: I boiled off some curly pasta and ladled some of this pulled chicken over it, topped with cheese. definitely half assed, and way tastier than I expected it to be.

Hemorrhaging cash this week, so no eating out, but since I cook most of our meals from scratch, I wanted something easy: went to the freezer and pulled out a tray of Whole Foods frozen lasagna roll ups. Made garlic bread (using frozen white bread leftover from the summer) and steamed broccoli. Dinner: done. Cost? $12 or so for at least 4 meals. Not bad, and far cheaper than a restaurant meal or even fast food.
Dessert will be homemade chocolate chip cookies (trying to find reasons to keep the oven on -- one zone of our heating system isn't working and, of course, it controls the heat in the kitchen and the family room -- repair guy will be here Wednesday morning to fix it).

I love avocado/guacamole, but am sick of using half, then tossing the other because I don't get to it in time. I'm going to put these on this month's grocery list.

Iggy, I swear by them. yes, you pay a bit of a premium, but it's definitely worth the convenience. guac just goes bad too fast.

Chicken sausages topped with sauteed bell pepper and mushrooms, green beans and apple sauce. I'm proud of myself for pulling dinner together from stuff we have instead of going to the store or eating out.
Total cost maybe $6. Apple sauce my grandma made for me and froze so free. I can't remember what the chicken sausages cost at Sam's. They've been frozen for awhile. Pepper and mushrooms needed used or pitched soon.

I love that feeling, knowing I didn't spend any additional money. there is so much stuff in my freezer from who knows when. slowly working through all of it.
dinner tonight was some black bean chicken over the rest of the curly pasta I boiled on Saturday. I am so full, woof.

Last night was mystery leftovers night-a thawed unlabeled container from the freezer which turned out to be zucchini lasagna. Nom nom nom. We split a bottle of pinot. Cost: Free because the wine was a gift. Tonight is leftover beer can chicken made into quesadillas. The chicken was approx $6, and the beer was a leftover from our Halloween party. Tomorrow morning I'll put this in the Crock Pot. Should be interesting as DH nor I know if we like sauerkraut, LOL. Low-Carb Slow Cooker Reuben Soup Cost? Because I'm going grocery shopping tonight. I'm out of town Thurs and Fri., so I'll suggested DH make Zatarain's Thurs and he'll prob go for fast food Friday. Sat something easy since I'll be tired from traveling. Sun IDK yet.

going to pack up a couple options for dinner tonight. one is a portion of the Korean glass noodles with spicy chicken, the other is the other half of a small cheese pizza from yesterday and a small Caesar salad.
I'll cost out the Korean food later when I can look up the noodle price. pizza was $5, romaine hearts were $4/3. I'll probably chop half a heart and toss in some baby arugula .

Taco salad tonight. Total cost around $5-6? Trying to figure out prices per serving from big containers trips me up. I think the hamburger was $3/lb. My family bought a cow and had it all made into hamburger. I've forgotten how much the check was for my quarter.
Tomorrow night should be Budget Bytes creamy garlic mushroom chicken served over rice with a side salad.

I am making Hoppin' John with pork chops. It's basically a Zaterain's mix for $2 and 2 boneless porkchops that I got on a buy-one/get-one special at Publix. I get four total for about $3.50. Oh, and you slice an onion to cook with it.
The recipe calls for four pork chops, but I just halve mine. With that much rice, etc., you can cut down on the meat.

I just polished off the other half of the bourbon turkey tips and mac 'n cheese. I sliced a fresh jalapeno this afternoon when I made lunch, it definitely added what was missing the first time around I'm trying to decide if I'm still hungry or not. I do have a container of cut up romaine in the fridge, I can easily shake some dressing into that for a little something more.

I made the mushroom chicken. Served over orzo because no one was home that knows how to work the rice cooker. I didn't get the salad made. Cost probably $7.
I have leftover taco meat and mushroom chicken so dinner Thursday and lunch Friday are covered. Friday night I'm on the road.

Because I'm going grocery shopping tonight. Last night's soup was yummy! A tip if you make it: Because it's a soup, the recipe calls for 8 cups broth. I used just 4 cups (one box of reduced sodium beef broth) and it was fine. The cost ended up being around $18.00 for at least 5 servings.

Last night was takeout pizza. Mine was topped with caramelized onions, roasted peppers, eggplant, and extra cheese. It was scrumptious. Cost? About $28 for 2 pizzas. Tonight will likely be burgers on the grill. My gas stove is messed up. I think it's the gas line. Had a plumber and the gas company here already. Gas company is supposed to come back Monday. So, our menu is reduced to baked/grilled foods -- unless we dig out the Coleman camping stove.

Fed two of us, enough for lunch one day next week.

I had the last of the creamy garlic mushroom chicken and some frozen vegetables. Chicken was accounted for above and I buy the vegetables on sale for $1.
Monday night will be a pork tenderloin roast. I'm trying to get rid of the older stuff.
The freezer is now stuffed full of sausage and pork chops as the pig was finally processed Saturday.

I bought 8 pieces of chicken for $6.99 at Publix for lunch. DH is sick, and that's all that interested him. He's eating it for supper, too. Once a day is enough for me. While there, I found Cure 81 presliced ham on sale. A small quarter was $5+. I had a $2.50 off any ham coupon. So cheap and delicious ham/cheese sandwich for me tonight.

I've returned from business meetings in Denver. I gained 7 pounds and feel blegh! This is what carbs and sugar does to me. Back to sparse eating. Yesterday DH smoked a rack of ribs in the smoker, $15.57 for 4 servings. He also grilled store prepared bacon wrapped cream cheese jalapenos, $8.31 for 2 servings. Tonight we'll have kielbasa (had a coupon) with last week's leftover sauerkraut. Cost approx $4.49 for 3 servings. Tues and Wed, IDK yet. Thursday is mom's for T-day. Fri-Sun IDK yet. I'll check back in after I'm more organized.
