It is also very portable so you can carry to offsite events or demos.”
And that portability and small size is another attractive feature for pros. Unlike the massive gas grill, which also requires an elaborate hood system, induction burners take up very little space. For Chef Jimmy Bannos Jr. induction burners were the way to go when building his kitchen at The Purple Pig in Chicago. Although the chef uses a wood-burning plancha grill to turn out some of the menu’s charred tapas dishes, the majority of his dishes are cooked on induction burners.
The team at Chef Frederik De Pue’s Table in Washington D.C. works in a kitchen entirely supplied with induction burners. “Induction cooking has a number of advantages for a kitchen as small as ours,” he says. “Efficiency is very important. A pan heats up faster on an induction burner than on a gas range and the cooking surface cools down much faster, so our chefs have some extra space if need be. Plus, you get more even cooking with induction, it’s much easier to clean, and it’s cost efficient.” ETA: I feel like I'm trying to sell you a new stove or something. Well, a couple of things. First, the original discussion was regarding electric vs. gas, and this is not the typical electric heating element. It is an electromagnetic technology which is a bit of a different animal. Second, I suppose I went over the top daring you to find ANY chef. We could probably find a cook somewhere who prefers to cook a grilled cheese sammie on an electric hot plate. I presume that we have determined the electric cooking element is inferior to gas, non? We can put that one to rest I think.....
Hey, I saw a 'life hack' where they turned the toaster on its side, to make a grilled cheese. (I hate to think what the inside of that toaster was like after!) I learned on electric, switched to gas, ended up with electric again and still wish I had gas. Is anyone going to fess up the name of the wonder cleaner?

Dem made my point exactly. With gas you turn it down and it's immediately cooler. Electric you have to wait for it to cool down and burn whatever you are cooking during the wait time.

I prefer my electric glass top stove because it can't be used for canning. No one can guilt or pressure me when my garden produces more than we can eat.

sorry, toomuchreality! I forgot to answer that question. Yes, what minnesotapaintlady posted is what Archie had recommended and I purchased. My glass stove top is much cleaner now. I spent about 20 minutes scrubbing it the other day. That is not indicative of the cleaner's abilities but of how long it had been since I gave up trying to get all the spots off. We use our stove top at least once per day and often three times per day. Even with wiping it down after every use, it still gets crusty stuff on it.
In fact, to me that's a down fall of the glass top vs. gas: I cannot clean the glass top for several minutes because I have to wait for it to cool. I don't have to wait for a gas top to cool, so it's easier to keep clean.

Is anyone going to fess up the name of the wonder cleaner? I'm so disappointed. I was hoping it was going to be a miracle cleaner I haven't tried. I bought some of this a few months ago. I tried it several times, on different things. Personally, I was less than impressed and gave it away. But then, I wasn't using it on a glass stove top either. I know several people that use soft scrub, to clean their glass stove tops. Have you tried it? Thanks for the info! I'm glad it works for you.

Does anyone still wondering why is Archie a hero? Only at YM I am telling you.
BTW to spice up the convo - have anyone still using matches to light up the gas stove?
