French onion soup! It is soooo good! And the perfect meal for a winter day like today.
Onions ~ $1 garlic ~ $0.05 beef bouillon ~ $1.50 cheese ~ $1.50 bread $0.40 dash of Worcheshire sauce ~ $0.05
So ~ $4.50 for 2 of us

I'm supposed to be going on a "date" tonight but feel like crap. If I don't go, I'll be having some kind of soup for dinner. I bought the ingredients for a tomato basil soup but I'm currently making chicken stock. So I guess I'll be having chicken soup, tomato basil soup, or ramen depending on how I feel.

when I finally get off my butt, I'm making a batch of black bean and kale soup for this week's lunches. I may have that for dinner tonight too. not sure yet. I'm starving now, we went to Five Guys before the shopping run and I found a hair in my sandwich so I threw it out. if I don't have the soup for dinner, I'll likely do a pasta toss. there's a bunch of veggies in the fridge that I'd like to use up before giving my mom a clean slate w/new groceries when she comes down for the week while we're away.

this is honestly the first negative thing I've had to say about Five Guys since they added a grilled veggie sandwich to their menu. my only option before that was a grilled cheese. really, while I appreciated the effort, they shouldn't have even bothered with it.

marvholly your cost per serving is impressive. I just can't get there.
That is the advantage of where I live. I have 3 fruit/veg markets that also sell meat, dairy & deli. i have 2 Aldi stores that I am near/pass at least 2x/week. i have 2 independent, regonal chain groceries. I VERY seldom venture into our natl chain stores - WAAAAY to $$$.
Example: I eat a LOT of chicken. One of my fruit/veg stores was selling thigh quarters for 0.29/lb. Store recently went to o.39/lb. A 3 lb pkg = abput $1.20 = 4 meals ( 3 of thighs & 1 of all the drums) = 0.30 for my protein.
I might complain about the cost of broccoli but my fruit mkt was 1.49 while the natl chain was 2.99 this past ad cycle.
AND no I do NOT run all over the world to get these prices. I tend to do a local run of about 6-8 mi rt (includes the library) and a long run of 15 mi rt which also covers Walgreens & CVS (drug chains). A lot of posters on several blogs I read religously sweat by WalMart and/or Target. My stores are cheaper 99% of the time although I do also pass both on my long run.

Last night: Smoked ribs (loyalty savings, whatever that means ) with leftover Red Lobster shrimp for me, 1/2 can of Hormel chili (sale, e-coupon) for DH. We each had leftover RL cheddar biscuits. Total $11.11 with leftover ribs for DH's lunch today. Tonight: Leftover pizza from niece2's BD party, green beans, butter. $1.10 Tuesday: Enchiladas-LC tortillas (loyalty savings, e-coupon), ground turkey (e-coupon) and beef (manager's special), cheddar, Monterey Jack, olives, enchilada sauce. Total $13.66 for at least 4 servings. Wednesday meeting night in the Crock Pot: Chicken breasts (multi pack loyalty savings), sugar free apricot preserves, soy sauce, spices. Total $4.65 for 3 servings + a quick side. Thursday: Cod, shrimp (loyalty savings), okra (sale). Total $16.58 for 3 servings. Yikes. Friday: Take out from? Saturday: Cornish game hen, spaghetti squash, Alfredo sauce (loyalty savings). Total $11.67 with leftover squash. Sunday: IDK yet Have a wonderful week, everyone!

not sure what's for dinner tonight, that's on the roommate to figure out today. I dropped enough $ between Walmart and Stop & Shop yesterday that it should be tasty, whatever it is. tomorrow night though, he's not going to be around so it's just me. I picked up a pork chop at Whole Paycheck just now, and want to stuff/bake it. I have mushrooms that need to be used, and I can't when he's home b/c he is allergic, so I'll make some mushroom gravy tomorrow as well. my question for y'all - what am I stuffing the pork chop with? I need ideas, please and thank you. I'm thinking about doing something with baby spinach and mascarpone cheese, maybe pine nuts? would that all work with a mushroom gravy?

I went full on sloth yesterday afternoon and just made a flatbread mini pizza for dinner. Tonight I am definitely making the tomato basil soup and probably throwing the can of rolls into the oven as well.

apples sound like they would work really well.... I went poking around and found this recipe for apple/cranberry stuffed chops that I will absolutely be trying some time. I don't think it would work with the mushroom gravy though, and now I'm kind of looking forward to that too. I think this might be my winner for tomorrow night - link - where I'll use pancetta instead of capocollo since I have it on hand. I found a bunch of other stuffing ideas that sounded really tasty, too. I'll add a thread to the recipes section and link to them, in case anyone else is interested.

Mushroom gravy suggests you need something more savory for the stuffing than sweet.
Although, now that I think about it, a few pomegranate seeds mixed into whatever stuffing -- as sweet as they are -- might be a nice complement to the earthiness of the mushroom gravy...

oohh, pom seeds. definitely going to keep that in mind for later, too. this time, I am trying to clear out the fridge in advance of vacation, so I don't want to be buying things for this. I think if I do up the spinach/pancetta/provolone one, I can saute up some garlicky kale and maybe some mashed potatoes. if I make a bunch of mashed, we can use it as a side for a few meals this week and have one less thing to make that night.

We ended up having sausages ($1 each) on a bun ($0.50 each), with French fries ($0.75 per serving) and coleslaw ($0.50 per serving) so $2.75 each. And it was DELICOUS!

so um, I do a good job trashing the kitchen (sorta but not really) when I'm really just winging it. I will post a pic if I can figure out how to do so from my phone. but, in an effort to clear food from the fridge/pantry, the only thing I actually bought for tonight's dinner was the $4 thick cut boneless pork chop from Whole Paycheck yesterday. I had to thaw out some chicken stock bc I think my roommate pitched the last of the carton I used Sunday on the batch of soup I made. will have to ask about that, and advise him not to do that bc I *will* find something to do with leftover stock. anyway, so dinner tonight was a spinach and cheese stuffed pork chop, broiled asparagus, and garlic mashed potatoes with mushroom gravy. I kind of love nights that my roommate isn't around, bc I get to not feel guilty about cooking things that he either can't (mushrooms/allergy) or won't (pork, period) eat. ETA: well, shit. the file size on the pic from my phone is too big to attach here. oh well, next time I guess!

Whispering That is EXACTLY why I batch cook at least 1x/week & freeze. A chicken = 6-8 meals. A pan of lasagna = 6 meals. I make meat loaf in muffin tins….. I do tend to eat my main meal at lunch (NOTE: I am retired).
