Years ago, I spent several weeks in southern California for work purposes. As opposed to flying home each weekend, one weekend several of us decided to stay. A co-worker of mine back home heard we were planning a Saturday morning day trip to Tijuana just to check it out. She said if I would pick her us some Mexican vanilla, she would bake me a chocolate pie which included the vanilla. I bought her the vanilla, she made me the pie, and it was delicious. A coworker makes the best damn chocolate chip cookies ever. It's the Mexican vanilla.

Lordy it was so cheap compared to buying it here.

At one of my former jobs my boss used to visit Mexico at the beginning of every December. She'd bring me back the Vanilla, I'd make her a batch of fudge. I am down to my second to last bottle of Mexican Vanilla.

Mom would always require my uncle to bring back vanilla when he'd travel to Mexico. He doesn't go much anymore, I think she might be out.

Caswell and Massey makes it. You can buy it at Whole Foods. They also make Tahitian vanilla.

What is different about Mexican Vanilla? Like coffee, the vanilla plant is grown in warm climates globally. The flavor of the bean is unique to each region where it's grown. Most bakers I know (myself included) prefer the taste of Mexican vanilla bean extract. It's a bit more potent, more fragrant, and...well - has a bit more attitude. It tends to come through more and not be masked by other flavors. There is another bean grown in mexico which contains a natural blood thinner that can be dangerous when consumed in high quantities. The extract of this bean smells and tastes like vanilla. It is for this reason that the import of Mexican Vanilla was not allowed for a time (at least that's what I was told). You should look for Vanilla that specifically states "Does not contain coumarin" if this is a concern to you. If anything, that will tell you you're getting the real thing (although I've had the fake stuff and it's pretty good too.
