Labor Day weekend was HogFest at the Tskeeters.
Thirteen pounds of pork shoulder went into the smoker about 7 PM on Friday. An over night smoke/cook that finished up about 6 PM on Saturday. Pulled the cooked pork, vacuum sealed, and froze for pulled pork sandwiches. On Saturday morning, a friend came over and we made 20 pounds of Elk/pork shoulder Summer Sausage. Into the fridge over night for the flavors to develop. On Sunday, the Summer Sausage got a two hour smoke facial, then a dip in a hot water bath to finish the cooking. Then the Summer Sausage bloomed for about an hour, before getting vacuum sealed and piled into the freezer. Monday morning the smoker got some repairs. One of the heating elements went out during the pork shoulder smoke on Friday/Saturday (that's why the pork shoulder took a few hours longer than normal). Then three racks of baby back ribs went into the smoker so they would be ready when friends came over Monday afternoon. Beer, beans, and all the nearly falling off the bone tender ribs you can eat. That's a balanced diet, isn't it?

We (me, mom and BFF) spent 3 days processing 150 lbs of roma tomatoes. They became canned tomatoes, tomato juice, tomato paste, sun dried tomatoes (they are still drying), chipotle ketchup and salsa.
DH worked for a couple of clients, but also helped us (along with BFF's DH) to lift heavy water bath canners, shuttle ice in and out of the house, order out for and setup/served meals and made our lives easier by doing multiple loads of dishes and kitchen towels as each type of tomato got finished. The guys were awesome.
We do this every Labor Day weekend. September 6th is both DH's parents' wedding anniversary and the anniversary of my father's death (and his birthday is 10 days before that), so we (me, DH and mom) like to keep busy around this time of year so we don't think about those landmark events and mope. Plus we get a year's worth of tomatoes for 50 cents per pound .
