Since I bought this Le Creuset thing today DH wants chicken & dumplings. I've never made dumplings before and with the recipes I've just read, I need to throw flour onto something and knead the dough adding stuff as I go along.
I don't have anything to throw flour on except my granite counter and not too sure I want to do that. What do I need to not make such a big mess that works for kneading dough yet is easy to clean up?

I've used my granite countertops before. I've also used large wooden or plastic cutting boards, if you have any of those around.

I have a set of cutting boards that are red or meat, green for veggies TV, they're not that big. May 9x13 but maybe not that big. Would a Silpat thing work?

Easy - get a can of biscut dough and use kitchen shears to cut little snippets in. I love scratch cooking but that little trick was told to me by my mom's southern neighbor. Makes the best dumplings ever!

I would think so. I promise the cleanup on the granite won't be bad In fact probably easier than anything else. Aren't modern granite counters now factory sealed? (I can't wait until we redo our kitchen!!! )

I always clean my counters with those. Scrape the leftover crap into the trash. Scrub with soap and water-then scrape it into the sink. Rinse with clean water and scrape into the sink. Dry with a towel. Takes no time at all.

Ok, I have either the granit option or the Kitchenaid. Now I need a recipe. Paula Deen uses ice water, others I've looked at are easier....my vote is for good and easy.

I have a rolling pin, but not sure where it is, will have to look. As you can probably tell, I've never cooked very much.....lol. But I have a great kitchen and only the best cooking and baking equipment......go figure.

If you have parchment paper, you can also put a big piece of that on your counter and then sprinkle the flour on it. The bonus to using parchment is that the dough won't stick to it either.

I've never rolled out dough for chicken and dumplings, just mix the flour and whatever in a bowl and drop it in by spoonfuls. Saves time and mess--fast and easy.

That's what I do for dumplings going into stews & such too, Apple - just mix up the ingredients really well in a bowl, then drop by the spoonful/dollop into the hot liquid/gravy of the stew.Once they've sat on the surface of the hot liquid for a few minutes, just roll them over to cook the other side.
That's how my mom did it for beef stews, and how she taught me.

My dumplings are just flour, buttermilk, salt and baking powder. Mix it up, roll it out, cut them up and drop them in the pot of boiling stock/chicken.
My granny was from Mississippi and this is how she grew up making them.

Bread making and dumplings are two different balls of dough.
You don't need a machine or special tool to make dumplings. Just a bowl, a whisk or spoon and the ingredients - the only power you need is a bit of elbow grease to mix the dumpling dough. It's as easy as making pancake batter from scratch and by hand.
