Iggy I have made stuffed faux baked potato using cauliflower for YEARS. Not tried as potato salad.
Was good Thur (8 veg + 1 fruit) and Fri (12 veg).
Today is my 'scheduled' day off. YIPEE for junk food day but will try to be reasonable.
ETA: I think my new to me veg this week will be swiss chard. it's on sale at a local market. I KNOW it is/can be used in soups & stews but NOT doing those when it is 85-90+ out. Prob will treat like spinach - in salads or sauted. Any other suggestions?
Also, I goofed when I boiught my last cuke. Since it was priced by the piece not by the pound I bought the largest I could find. NOT a good choice. It was bitter & developed soft spots in 2 days. Probably going to have to toss 2/3 of it. I did put some up to marinate with vinegar & chive this am.

i 'saved' the cuke. Peeled, removed seeds, sliced and put in a 50/50 vinegar water mix. Not bitter & cut away bad areas.,
