How can garbanzo beans count but not hummus? I had celery, cucumbers, tomato and tuna for lunch. We had a one pot dinner of chicken, zucchini, tomato sauce and garlic. If you take whole garbanzo beans and personally make hummus, we will count it. But the focus is on eating actual veggies ... not things (like tomato sauce, tomato soup, ketchup) made by others (commercially) from veggies. If you make tomato soup from tomatoes, then you can count the soup. Ok, then just 4 veggies yesterday. Just 2 veggies today but am working on increasing the quantity. Ate a whole zucchini for lunch and some of the fresh green beans for dinner.

Captain I am probably good for about 2 cloves/day between cooking w/it in EVERY entrée and salad dressing. About the ONLY things I don’t use garlic in all seem to be chocolate.
I was bad girl on Thur. Shopping errands took me MUCH longer than anticipated & wa lazy whn I got home. Nuff said. Today will be better. I plan to do a batch of roasted veg while it is cool enough to have my oven on. Will do cauliflower, broccoli and carrot. Also potato chunks (I consider them a carb).
Debating about making Sat (to replace Thur) a veg day as it is usually a junk food day.
ETA: anyone roast or grill bok choy? May try 1/2 a small head. It is often on sale here. Lots of Asians in the area.

Holly, I stir fried the baby bok choy earlier this week. Roasted sounds interesting, however. Yesterday, Iggy had: Fresh spinach, cauliflower, Roma tomato and zucchini (all these prices listed on the prior page), and 1 cup cabbage (1.77 for the entire head).

Iggy I did roast about 1/3 of the head but have not eaten it yet.
Fri ate spinach, potato, mushrooms, tomato, carrot, broccoli, cauliflower, zuchinni and onion = 9 veggies

back on track Sun. Ate leaf lettuce, boston lettuce, collard greens, zuchinni, red onion, artichoke hearts, carrot, tomato, cauliflower, broccoli: 10 veggies + 1 fruit.

carrots, broccoli, cauliflower, leaf lettuce, boston lettuce, collard greens (last of), tomato, mushrooms, spinach, bok choy - 10 different veggies. Had a couple at 2 meals.
Going out today to hit 2 local veggie markets for a couple sale items.

Did't do as well as planned Wed: tomato, mushrooms, spinach, caulilower, romaine, leaf lettuce, boston lettuce, artichokes = 8 veggies, plus 1 fruit.
ETA: tried something new Wed: faux risotto: Cauliflower chopped in the food processer, diced mushrooms, shredded spinach; all cooked in a bit of chicken broth (1/4 c) and finished w/ some grated parmesan. Did NOT use any butter or fats. Not bad. Would probably add more veggies Could use some other color too like shreded carrot and/or tomato.

Not Monday night (I still had the BBQ in the dining room from when we were supposed to have the buildings pressure washed.) Last night I finally put it back outside and grilled some fish and did a cob of corn. I sprinkled salt, pepper, cumin and butter all over that thang! It was really good.

Back from camping all weekend. And, boy, I really need to work on packing veggies! I had some cauliflower on Saturday and again last night in the mock tater salad I make, but that was it! We did have some fresh strawberries yesterday in the camper with brunch....

We went out of town to a conference and I caught DH's cold. On the way back I asked DH to get me some soup from an airport restaurant for my sore throat and he came back with a BIG bowl of VEGETABLES!
(Yes, he did bring soup too but later.)

I didn't do as well as planned on Mon. I REALLY need to prep dinner earlier in the day so it is just heat & eat. I get too lazy by 5 or 6 pm.
Had 8 different veggies and 1 fruit.

Yesterday: Spinach, a whole homegrown tomato, cauliflower. Had blueberries on top of the salad.
Still not as many veggies as usual. What a difference produce shopping and preparation make.

I'm enjoying reading this thread. I am getting five servings a day in my morning smoothie. The rules are simple: has to be fresh or fresh-frozen (no syrup or sugar added) and if possible, skins, seeds and pulp are used (as long as they don't clog my juicer or blender).
I've got oranges, pineapple, cherries, bananas, carrots, kale, spinach, blueberries and grapes, plus fresh ginger root at the moment. I juiced the kale, spinach, ginger and oranges and froze the juice in a plastic ice cube tray, so I can add cubes to the smoothies.

Yesterday, I tried purple asparagus for the first time. (Verdict: just like regular asparagus, only more expensive)
Today, I added jicama and crimini mushrooms to my plethora o' veggies. (The store was OUT of radishes!) I also bought Armenian Cucumbers instead of regular ones.

Since I discovered I can tolerate cuke and they are on sale this week 3/$1 I will get one. Will try it with some mild vinegar like rice or white wine or maybe balsamic.

I was having tummy problems today, so needed to cut way back on veggie intake, temporarily.
