the temps in Korea are only going to be about 60-70 F, not really a tropical vacation Later, we all are comfy at different temps, but 60-70 F is actually really, really nice. (I'm only pointing that out in case you live in a land of C and can't picture F as well, like my English relatives.) We're in SW Florida and I get cold easily, but 60-70 is still awesome. You can do anything outdoors comfortably, you're not sweating at all, can wear shorts or long pants, don't need heavy layers, etc. That sounds like ideal travel and touring weather, honestly.

So, what do people in Hawaii complain about anyway? It couldn't be the weather.. (That's all we complain about in the Midwest).

I want to eat Vietnamese food!! but I would have to drive 30 minutes!!!!wahhhhhh!!! I know you've got really small kids, so feel free to ignore this if it sounds like way too much hassle, but I love, love, love Vietnamese food too and am finding a few recipes to make at home that aren't that hard. If you want to try some, here are two that I make fairly regularly. The kids love them and they're not way too much work: Vietnamese Pho - from Cooks Illustrated Serves 4 to 6
Our favorite store-bought beef broth is Rachael Ray Stock-in-a-Box All-Natural Beef Flavored Stock. Use a Dutch oven that holds 6 quarts or more. An equal weight of tri-tip steak or blade steak can be substituted for the strip steak; make sure to trim all connective tissue and excess fat. One 14- or 16-ounce package of rice noodles will serve four to six. Look for noodles that are about 1/8 inch wide; these are often labeled “small.” Don’t use Thai Kitchen Stir-Fry Rice Noodles since they are too thick and don’t adequately soak up the broth.
Ingredients 1 pound 85 percent lean ground beef 2 onions, quartered through root end 12 cups low-sodium beef broth 1/4 cup fish sauce, plus extra for seasoning 1 (4-inch) piece ginger, sliced into thin rounds 1 cinnamon stick 2 tablespoons sugar, plus extra for seasoning 6 star anise pods 6 whole cloves Salt 1 teaspoon black peppercorns 1 (1-pound) boneless strip steak, trimmed and halved 14-16 ounces (1/8-inch-wide) rice noodles 1/3 cup chopped fresh cilantro 3 scallions, sliced thin (optional) Bean sprouts Sprigs fresh Thai or Italian basil Lime wedges Hoisin sauce Sriracha sauce
Instructions
1. Break ground beef into rough 1-inch chunks and drop in Dutch oven. Add water to cover by 1 inch. Bring mixture to boil over high heat. Boil for 2 minutes, stirring once or twice. Drain ground beef in colander and rinse well under running water. Wash out pot and return ground beef to pot.
2. Place 6 onion quarters in pot with ground beef. Slice remaining 2 onion quarters as thin as possible and set aside for garnish. Add broth, 2 cups water, fish sauce, ginger, cinnamon, sugar, star anise, cloves, 2 teaspoons salt, and peppercorns to pot and bring to boil over high heat. Reduce heat to medium-low and simmer, partially covered, for 45 minutes.
3. Pour broth through colander set in large bowl. Discard solids. Strain broth through fine-mesh strainer lined with triple thickness of cheesecloth; add water as needed to equal 11 cups. Return broth to pot and season with extra sugar and salt (broth should taste overseasoned). Cover and keep warm over low heat.
4. While broth simmers, place steak on large plate and freeze until very firm, 35 to 45 minutes. Once firm, cut against grain into 1/8-inch-thick slices. Return steak to plate and refrigerate until needed.
5. Place noodles in large container and cover with hot tap water. Soak until noodles are pliable, 10 to 15 minutes; drain noodles. Meanwhile, bring 4 quarts water to boil in large pot. Add drained noodles and cook until almost tender, 30 to 60 seconds. Drain immediately and divide noodles among individual bowls.
6. Bring broth to rolling boil over high heat. Divide steak among individual bowls, shingling slices on top of noodles. Pile reserved onion slices on top of steak slices and sprinkle with cilantro and scallions, if using. Ladle hot broth into each bowl. Serve immediately, passing bean sprouts, basil sprigs, lime wedges, hoisin, Sriracha, and extra fish sauce separately.

First world whines? Time change happens the day we leave for Asia so I'm going to spend the whole trip trying to figure out the local time wherever I am and paranoid that I'm screwing up flights times etc. And the temps in Korea are only going to be about 60-70 F, not really a tropical vacation Korea is definitely not tropical. they are located very north. The have 4 distinct seasons, and their winters can be very cold. why didn't you plan to go during cherry blossom season?

Gira. Sleep deprivation is a bitch! I have another whine - I really want a Diet Coke, but they just raised the vending machine prices and it makes me feel icky to spend $0.85 on a 12oz can when I can walk to CVS and get a 20oz bottle for $1.25 (or pick up a 12pack at Target for $3) but those last two would involve going outside, and I don't wanna.

This one is the bomb!!! The sauce would be good on any veggies. I don't bother with the puffed rice, though, just the sprouts and sauce. Yum! Gourmet | October 2007 Momofuku Noodle Bar and Momofuku Ssäm Bar - Roasted Brussels Sprouts Makes 8 (first course or side dish) servings Ingredients add to shopping list For brussels sprouts •2 pounds Brussels sprouts, trimmed and halved lengthwise •3 tablespoons canola oil •2 tablespoons unsalted butter For dressing •1/4 cup Asian fish sauce (preferably Tiparos brand) •1/4 cup water •1/4 cup sugar •3 tablespoons finely chopped mint •2 tablespoons finely chopped cilantro stems •1 garlic clove, minced •1 (1 1/2-inch) fresh red Thai chile, thinly sliced crosswise, including seeds For puffed rice •1/2 cup crisp rice cereal such as Rice Krispies •1/4 teaspoon canola oil •1/4 teaspoon shichimi togarashi (Japanese seven-spice blend) •Garnish: cilantro sprigs; torn mint leaves; chopped scallions Preparation Roast brussels sprouts: Preheat oven to 450°F with rack in upper third. It's 64 outside right now and I guarantee if I hopped over to the beach, there would be dozens of fish white people cavorting about wearing nothing but scandalously small patches of lycra, socks and Birkenstock sandals. They'd even be swimming.

Mid, Coke is 5/$11 at Target this week. Yeah I know it still involves going out.
My landlord is from Vietnam. We go out for pho. True pho involves boiling beef bones for like 24 hours. Anything else I want he'll make. Luckily there are pho places on every corner.
My other whine, I'm nearly a month out from a car wreck. Yesterday was one of the worst days I've had pain wise. Today is better though. I know I'm lucky I wasn't badly injured but damnit I was supposed to be healthy in 2014.

I went to Miami two years ago in January. It was 70 and sunny. I loved it. I could tell who the locals were at the bowl game. They were convinced I must be cold in my jeans, short sleeves and flip flops. One lady even had a sweater on her dog. It was 15 when we flew out of BWI.

But for those of us who don't live close to a good pho place, the nice people at Cooks Illustrated did some experimenting to figure out if they could get a similar rich taste using some shortcuts. CI is a little like a combo of Consumer Reports and advanced culinary hackers. The pho recipe above is a reasonable shortcut, IMHO.

It's f-ing cold and snowing again. The potholes are horrendous! I have seen so many cars off the side of the road with blown tires and I fear I'm next. DD just got orthotics for her shoes and gets braces next month, poor kid, all she needs is a pair of glasses and she'll have the nerd trifecta. DH and I were going to go to NOLA in May for his 40th birthday, however DD's spring dance recital is that same weekend so we cancelled. Instead, we are going to Florida in 3 weeks for a long weekend to go to Epcot Flower & Garden Festival and then on to Tampa for Yankees spring training. I'm glad we get a weekend away, but it's not NOLA!

My BFF was there and warned me about it ahead of time, but I just thought she was exaggerating. I was like "whatever, I live in DC, you don't know what you're talking about." Nope. Wrong. It was insane. We did laundry and it took 3 days to hang dry, and that was only after we packed it up to take to Japan and hung it out in our air conditioned hotel to finish drying. 60-70 should be the perfect temp for being out and touring around! Trust me, you don't want to be wandering around and hit the fish/meat market street with it's 90 F. You're going to have such a great trip!!!

My first world whine is that last year we had the highest income of our lives. It sounded great until I had to to our fafsa in January and had it tell us since we are so rich we could afford to pay 50% of our gross for DD's college. I am not even sure our net is 50% of our income. and milee I hope you take this in the spirit it is intended, but my first thought when you said you might have to move to Hawaii was fuck you.

Thanks for the recipes! I'm not going to make it today, because I lack one of the most important ingredients! The Thai basil always makes the dish for me. I have to go to the Asian market to get that. I'm so jealous of people living near decent restaurants. What we have here are just these things they call snack bars, typical fast food (subway & McDonald), shawarma places, pizza, pubs, and high end French restaurants. And ethnic restaurants are just watered down versions that have been heavily adapted to Canadian taste (or lack of taste). Good Mexican food, impossible!!! Not even in big cities' There is a reason why there aren't Canadian restaurants anywhere in the world except Canada. The cold destroyed their taste buds. Before you Canadian start throwing your digital hockey pucks at me, there are a lot of good things here. Unfortunately, food is not your forte.

Let's add to how very first world some of this whine truly is....
- I finally bought furniture for an oddly shaped room, only to find that now we may have to move to Hawaii. Who knows if this furniture will fit in our new beach house? - We can't go to Spain or Portugal (and from what my English relatives tell me, those are cheap and cheesy places anyway) because we're moving to the paradise that is Hawaii.
I think resolution might win the Best First World Problems Award for today! The Hawaii thing may not actually happen, but the move to some random place will almost definitely be happening. We have to sit down and make serious budget this weekend and decide how broke we are willing to become.

My whine is that I'm stuck in the house again and can't go hiking. We're trying to get ready for a dinner party on Saturday and I'm stuck cleaning and putting up pictures and the like after painting the dining room.
But I'm looking forward to our little 3 day trip to San Diego on Sunday. This trip was originally set up to show the MIL our home in N. San Diego County until she flaked and changed her mind. DH talked her into canceling her ticket. I said screw it and DH and I are going anyway as a little anniversary present to ourselves. We're going to stay at our cabin in the So. CA mountains. And you guys are going to kill me but I'm looking forward to seeing....snow!
ETA: And I made a point of setting up appointments to visit/inspect all three So. CA properties so we're writing this trip off.
