I cook most nights of the week (to save money, of course!) and while I love to cook, sometimes I get bored with our weeknight dinners. So I'm being nosy with the hopes of becoming inspired.

No idea and it is 7:55 p.m. here. The kids are out as is DH. All will be home later. I am hoping DH will make the executive decision to get Chipotle takeout for him and the kids. I'd love a night off as head chef and dishwasher...

Baked chicken, roasted potato, zucchini, tomato... And beets. I may be getting tired of zucchini. i made some sauce today, but we are going out tomorrow, so I guess I'll make some kind of pasta Friday.

last night was broiled turkey breast over a large spinach and radicchio salad. tonight, it was an apple pie Larabar in the parking lot outside the rink. I might grab some chips when I get home after my game...around 10. or not. sent from my electronic distraction

Baked chicken, quinoa and broccoli.
I have to figure out how to make the quinoa so my family doesn't hate it. I think I better start cooking it now, and then serve it cold with some citrus based dressing.

Baked chicken in lemon garlic sauce with roasted veggies (zucchini, potatoes, peppers).

Chili verde, with rice and beans.
I do a pretty simple one. Tomatillos, white onion, garlic, jalapenos, and anaheim peppers browned slightly under the oven broiler then put through the food processor. While doing that I cut a pork roast into steaks, and sear them slightly on each side in a frying pan. Then I cube the meat and throw everything in the crockpot with a little bit of salt, some ground cumin, and put it on the 6 hour setting. Before I serve it, I mince up some cilantro and stir that in.
Tomorrow I'm baking a chicken. I do that in the crockpot too. Cube some potatoes and put those on the bottom of the pot, put a simple spice rub all over the chicken and set it on top, and turn it on. No liquid added. The chicken skin gets crispy, but enough drippings come out to soften the potatoes for mashing. We'll do that with a veggie salad from the garden since the wife keeps nagging me to use the lettuce.
I'll use the leftover chicken to make enchiladas.

DH IS getting Chipotle for him and the kids!!!!!! If I get hungry enough, I'll have leftover pasta and salad. Or cold cereal in a deep bowl.

Lobstah and two Guinness.
Out to dinner with MIL and her boyfriend I despise. I was good, I stabbed no one with a seafood fork. It was a close thing, but finally the waitress brought my second drink. I concentrated on consuming it as quickly as possible.
Lat night was a sausage,rice and veggie medley. Tomorrow will be chicken breasts with homemade bacon mac and cheese and a side salad.

This sounds remarkably similar to my cooking. though I usually shred the roast with salsa verde and toss in some shredded pepperjack or quesadilla queso. Salsa verde is my favorite. Sadly, I've used up my stash from last summer's garden (aka the great tomatillo explosion of 2012) we regularly have roasted chicken from the slow cooker... or a turkey breast since DH freaking loves turkey. leftover turkey goes into a turkey pot pie or turkey and veg soup. - I actually haven't done that in a few months since we cleared out the freezer before we moved. I think I'll get that going next week!

If it wasn't so hot, I'd do the roast in the oven and shred it, but it hit 81 today so I got lazy. I usually sear mine with a blend of cumin, garlic, salt, pepper etc. then throw it in the slow cooker for 7.5 hours on low. shreds like a dream.

Tonght is leftovers (fried rice, stir fried veg, shrimp, scallops) from that dinner. I should do up some more veggies.

Mine isn't thrilled with quinoa, either. They seem to like it best when I cook it in chicken broth with a little salt, so it's savory, though. Have you tried that?

tonight is hamburgers because I have 5 lbs of ground meat to deal with. So I'm going to make a bunch of patties and freeze them and some chunks of meat for other meals.

We had chipotle chicken tostadas last night. We usually have chicken wraps/tostadas/quesadillas once a week.
All this zucchini talk... I think I will hit up the farmers market today! I want zucchini!

Beef stew tonight; I got it started in the crock pot this morning.
I had originally planned orange chicken, but they wanted $1.50 per orange at the store, which just struck me as outrageous for something that no one can give away at home.

Last night I grilled marinated chicken, made salads and sauteed squash with some onion. I melted a little sharp cheddar on top of it.
Tonight I'm grilling ribeyes and topping them with sauteed green pepper, onion and mushrooms. I'll also bake sweet potatoes and I'm slicing and grilling the little eggplant I got from a friend's garden.
My brother wants to do a stir fry with steak tips, squash, pepper and onion. Getting ideas out of him is like pulling teeth so I'll take whatever I can get.

The kids stayed at the in-laws yesterday ( ) so I made myself a riff on a caprese salad sandwich: I used fresh basil, tomato and pepperjack cheese since I didn't have any fresh mozzarella. I started it on the stove top open-faced and then put it under the broiler for a couple of minutes before putting it all together.

tonight will probably be baked pork chops (seasoned with dry rub spices), green beans (frozen - blech! but fresh ones are too expensive and time consuming to deal with), and rolls (a sweet potato for me instead of a roll).
