My favorite of the super easy, quick Gazpacho recipes:
Gazpacho (Makes 8 cups or 4 two cup servings)
1 ½ lbs tomatoes (about 3 medium beefsteak or 6 smaller), stem cut off and halved 2 medium red or yellow bell peppers, cored and cut into quarters 1 lb cucumbers (2 small or one large) ½ peeled, roughly chopped into 1” sections ½ - 1 small sweet onion, minced 2 garlic cloves, minced 2 tsp salt 1/3 c. rice vinegar 1 tbl sherry 6 grinds black pepper 1 tsp chipotle tabasco sauce
Blend tomatoes in Vitamix until mostly pureed, but still lumpy, not long. Pour into big mixing bowl. In food processor: Pulse peppers approx. 10 short times until 1/4” – 1” pieces. Stir into tomatoes. Pulse cucumbers approx. 10 short times until ¼” – 1” pieces. Stir into tomatoes. Stir in onion, garlic, salt, vinegar, sherry, pepper and tabasco.
Best if refrigerated at least 4 hours before serving.

I was thinking of making gaspacho this week. Tonight I'm making quinoa tacos. It's a one pot recipe that takes minimal time and effort. I may also do a fresh tomato sauce - just put beefsteaks, olive oil, garlic, and basil in a food processor!

Grapes and radishes are my current favorites in this heat. Also lots of ice water with cucumber slices. I have a hard time finding substantial foods when it is this hot.
DH can fend for himself at the bbq grill. I did make him a roast with potatoes and carrots over the weekend, but it's just so much better to have that kind of meal on a cold day. I used the crock pot so that the oven was on for hours heating the house while the AC worked overtime to cool it down, but still...

My husband insists that soup is the best hot weather food. The issue being more a discrepancy between inner/outer body temp, and if you 'warm your insides' it isn't as disparate as the outside. I don't know But lots of his 'folky remedies' do work...

lots of salads. DH still grills meats and i throw some steamable veggie packs in the microwave. Also- i use the toaster oven instead of heating up the kitchen with the oven.

This is pretty much what we had last night. Shrimp pasta salad with raw veggies and pesto, a chunk of sour dough bread and an amber cider. BLATs tonight.

She used to eat cold foods during winter and hot foods during summer and gave this explanation. It makes sense if you think about it.

We've been eating a lot of sandwiches. I'm going to head over to Allrecipes to look for some salad ideas. What do you like to eat when it's way too hot to cook? I eat whatever is put in front of me. I really could care less except for liver, that I don't allow in my house.

milee, I've never made Gazpacho before. Do your kids like it? Yes. When I first served it, I described it as chunky V8. (For some odd reason, they both love V8)

Good thread. ODS asked me recently "why (I) don't cook dinner anymore?". My reply? "Because we're on Day 12 of temps in the 90s and oppressive humidity so it feels like 100+ and we don't have air conditioning, son. But, hey, knock yourself out IF *you* are so inclined."

Like others: lots of grilling done outside (proteins and veges); salads, including cold noodle salads with interesting dressings; smoothies, fresh-pressed juices; lettuce wraps.
Easy Garden Slaw: take whatever is "sturdy" and fresh (carrots, beets, squashes, scallion, cabbage, fennel, bell peppers, whatever you like) and shred it raw in the food processor. Turn it into a large salad bowl and toss with your favorite vinagrette dressing. Then stir in any chopped or sliced softer veges that you like (tomatoes, cucumbers, etc), pine nuts or almonds, olives, capers, sun-dried tomatoes, parmisan cheese and/or feta cheese - again, whatever tastes float your boat.

When it's hot we put our toaster and crock pot out on the (covered) back patio. I've also been known to use use the grill as a "stove" and heat things up in cast iron pots or pans (the "regular" pans could probably not withstand the heat multiple times).

I never thought of putting the crock pot outside. What a great idea.
When I can, I use the burner on the grill to boil the jars. It doesn't heat up the house, and if we have a jar explosion, it's outside so I don't care.

I don't particularly want hot food this time of the year.
ETA: Dinner is sometimes cheese, crackers and fruit or chips and salsa.
