My reasons for changing our lifestyle is because you're right: the rise in disease in this country goes hand in hand with new things. Take the Monsanto thing for instance, they started doing GMOs in what, 1996-1997? How much has autism and other neuro problems escalated? What about cancer? Did you know there is a preservative called TBHQ that is a form of butane and is illegal in almost every country for food use, besides the US? BHT and BHA are also illegal in most countries for food use and is used to make jet fuel and petroleum production! These three preservatives you will find in your GM cereals, granola bars (Planters nutrition bar to be exact) and microwave popcorn to name a few. Scary stuff! I don't buy any food at all that has any chemical preservatives in it.
BPA is seriously being linked to breast and prostate cancer as well as other problems, they call it a hormone disruptor...those are my reasons for going more natural.

When I lived on Kauai they had a lot of crops out there. I was visiting a family that lived in a plantation village for the sugar cane fields. They had received cooked corn on the cob from one of the "fields on the west side" and offered me some with the farm asking their opinion on the taste. I took it, not really thinking too much about it. It was only after I ate them that I really started thinking about where they came from and I wanted to puke. They were (most likely) using those poor (yes, as in low income poor) people as their guinea pigs! Since then I think I've only eaten corn on the cob 2-3x and only directly from a local farmer. But even that doesn't guarantee anything.

Haven't read everything but when it comes to bread my mom and I use whole wheat flour for all of it even when it calls for white/bread flour.
We made a great one in the bread machine this weekend with oatmeal, flaxseed, zucchini and carrots. Very moist and smells/ tastes great.

I recently read a book Wheat Belly - I don't know how much of it is true, haven't done any other research, but if it is true, I will be finding other things to eat besides wheat. It is crazy scary how modified it is and how much crap is in the wheat itself.

I recently read a book Wheat Belly - I don't know how much of it is true, haven't done any other research, but if it is true, I will be finding other things to eat besides wheat. It is crazy scary how modified it is and how much crap is in the wheat itself. Lena I donno..I haven't researched it but I mean if you have gluten problems, then avoiding wheat would be wise. I have heard that wheat can, for a lack of a better term, symptoms in people on the autism spectrum. I have personally never had problems with wheat and neither have my kids. I am really interested in getting a mill and milling me own grains.

Oat flour is really easy to make--take oats (not steel cut, too rough, but old fashioned oats) and grind them in a grinder or blender.

There is a difference between genetically modified and cross-pollinated...cross pollination happens naturally, genetically modified is when a scientist has the intent of changing the genetic makeup. For this reason I buy either organic or verified NON-GMO. In reality, we probably can't eliminate the contamination, but we can certainly lessen the impact of it by doing our best not to use/consume GMOs

Oats are generally contaminated by wheat... True, but since I can tolerate gluten, it's not an issue for me. For someone who can't, you can buy GF oatmeal and make your own flour from that (usually cheaper than buying pre-ground flour).

I just really don't have any craving for grains? Except rice. I don't want bread... If I make a cookie or something I generally just use nuts or nut flours...

I love grains--bagels, breads, etc After I had my son I ate mostly breads for two weeks (he was in NICU, I was a wreck, and the hospital had the best rolls, bagels, breads ever!) Lost all but the last five pounds of baby weight during that time (and didn't gain it back until I did the depo shot--wish I had never touched the stuff). Anyway, my body seems to do well on it and I can still eat it when trying to lose weight (at least, I've never noticed any issues). Don't know if I'm lucky or stubborn

Haven't read everything but when it comes to bread my mom and I use whole wheat flour for all of it even when it calls for white/bread flour. We made a great one in the bread machine this weekend with oatmeal, flaxseed, zucchini and carrots. Very moist and smells/ tastes great. Even when I follow the recipes included by the manufacturer...

He was telling me about how he'd read that something like 95% of the wheat grown today (not sure if that's us or worldwide) is this GMO wheat designed to grow short and fast. And that it's not exactly compatible with our great-grandmother's recipes. And that the "real" wheat strains are basically gone from our food supply.

This is from my High Altitude Baking book--so I'm guessing you would need a littlemore yeast for sea level. I'll include the recipe, and then what we actually did since I'm incapable of actually following a recipe.
Bread Machine Parmesan Cracked Wheat Bread 1 1/2 teaspoons active dry yeast 2 cups whole-wheat flour 1 cup bread flour (we just used 3 cups whole wheat) 1/4 cup multi-grain hot cereal (we used oatmeal) 2 tbsp crackedwheat (we used oatmeal) 2 tbsp wheat germ (we used flax seed instead) 1 tsp salt 1tsp dill weed 1 tsp basil 1/4 cup grated carrot 1/4 cup grated zucchini 1/4 cup grated parmesan cheese 1tbsp vegetableoil 1 tbsp honey 1 cup warm water (105-115F)
Add ingredients to bread machine in order listed above. Select the sweet bread cycle at a light to medium setting (we actually picked the light whole wheat setting). Press start.
One thing that the book talked about was using the sweet bread cycle with whole wheat breads because of the longer mixing cycle. Although I think that was suggested for high altitude also.
I plan to try this one again without the spices and cheese to get a less savory, and more every day wheat bread too.
And this ends my plan to go gluten free now that the baby is here... ;D

I know. This author claims that today's wheat has been extensively genetically modified over the last 100 yrs of so I would like to see his proof for this, that is a pretty hefty claim to say that the entire national crop of wheat in this country is ALL genetically modified (PS, I am not trying to be a butt about you posting this, I am just really curious). As for my understanding, they didn't start genetically messing with crops until the 90s and they mostly do soy, corn, and canola, but I could be mis-informed. I have to have carbs, I am not diabetic, but my body does not function if I do not eat them. I tried to do the whole cut out most of your carbs from your diet and I became the biggest bitch in the world. Not only that, I always had the feeling of my blood sugar crashing (cold sweats, blurry vision, shakes, loss of concentration) and I was always hungry. I still don't know how people can live without eating ANY carbs is beyond my little brain ;D

I don't think so. I think fast is plant in spring and harvest in summer and plant again (if your weather permits, I don't think Wisconsin's does.)
