I would suggest what Tiny said. Start the thaw in a water bath tonight so it can finish thawing on time in the fridge.

All the turkeys we eat are unnatural. Wild turkey has much less breast meat, and the lower leg is very tough. Other than the lower leg they do taste good though. Yep. Did anyone else see that Dirty Jobs where Mike went to the Turkey plant to artificially inseminate the turkeys? Blech. The commercial turkeys have been bred to have such large breasts that they no longer stand or walk on their own and also can't mate.

Does he have stories for you about members forgetting to turn the stove off before going out on a run and coming back to a kitchen in flames? And having to fix it before the next shift comes on? OMG, I almost died laughing one lunch when we had people telling tales out of school.

Alton Brown did this on his Thanksgiving special. He actually puts a dry rub on it and dry ages it in the fridge for a few days first. It looked pretty good, and I've loved his other recipes. It also cooks a ton faster that way. It counts down the 4 days before Thanksgiving and tells you what to do when.

One last reminder - when putting the turkey into cold water (letting it swim/bathe/have a spa treatment) to thaw -- leave the turkey in it's unopened air tight original packaging!! You really don't want to encourage bacteria growth - nor do you want to ruin your turkey (by letting it soak up water and mess with the 'seasonings' it came with from the factory). The only time a raw turkey needs to sit 'nekkid' or unwrapped in cold water is if it's already thawed and you are brine-ing the turkey. You don't brine a turkey that's already got 5% or 10% added saline/seasonings (99% of all frozen turkeys). Just in case it's confusing to anyone. There's no need to play with the chance of getting food poisoning (no matter how small a chance it might be). ADDED: I have Sister In Law cooking horror stories... to back up this stuff.

I'm going to give the turkey a bath tonight, since I have to start cooking the turkey about 6 on thursday morning. The way I was taught is start defrosting no later than Monday (15-20 lb bird). Wednesday night before bed, rinse it good in hot water inside & out making sure to remove all of the nasty bags of innards but don't worry if it's still a bit frosty inside. Put it in a deep roaster and pour white wine over it and in it and be sure to have at least 2" liquid in the bottom of the pan (you might need 2 bottles or add water). Cover tightly with tinfoil & put it in the oven at 200 deg. When you get up in the morning, baste it and check with the meat thermometer to be sure it's done through and if not, take off the tinfoil and cook until it's done checking every 30 minutes. Once it's done, wrap it back up tightly and keep in the oven on warm until 1 hr before serving when you pour off the liquid to make the gravy. If you need to clear the oven to bake other stuff, put it on top of the stove instead.

That's right - it goes into the oven frozen completely solid. I've used this method many times now and have the best results. The turkey is beautifully moist and tender and perfectly browned. And it's so nice to not have to worry about thawing that huge bird!

I am just trying to figure out how that plasic bag of frozen inards, in the birds cavity, is going to taste when it is cooked.

I read the directions and it says at 2 - 2 1/2 hours in you remove the giblet bag from the cavity.

I mentioned deboning the turkey earlier in the thread. I actually break down the turkey into parts and cook it when I need it, but I have cooked several different parts at one time to mimic having a whole turkey (some white, some dark) but not having to cook so much turkey.

I swear, next year I'm just getting a fresh turkey. Every year I buy a frozen one (whole or breast) and dutifully put it in the fridge Sunday or Monday. And every Thanksgiving morning the damned thing is still frozen. Last night I left it in a cold-water bath for three hours; this morning I could still feel ice so left it in the bath another three...and pulled a big hunk of ice crystals out of the cavity when I opened the wrap.
Stupid thermodynamics.
