All of the posts about changing industries have been quite timely. DH is a vet tech, but has been wanting to become an instructor/professor. And a part time teaching job just opened up at one of the tech schools so he is applying! ;D
I can't tell you how excited I am that he is even willing to apply.
I'm going over his resume and trying to help him match it up more to the job description (which couldn't be more brief, but whatever).
I wanted to ask what format people preferred for cover letters these days?

If you submit by snail mail or in person, a standard typed cover letter is fine. If you have to submit resume by email, I am fine with the content of the email being the cover letter. If you have to fill in an online form, sometimes there is a place to add a cover letter.

Rae: you can find samples of cover letters all over the internet, too. Take a look at a few and see what you feel looks easy to read and hits the high points of his qualifications.
