Yes, my former boss made a very good living suing restaurants for FLSA violations. There were nights when some of my coworkers didn't average minimum wage... sometimes the assistant manager would schedule 5 or 6 servers for a super-slow Monday night. If you've got 2 tables an hour and they each leave you a couple of bucks, and then you stay an extra 45 minutes after closing to clean, you're probably not going to average MW. Apparently others haven't experienced that, but it does happen

Well, I'm sure it all evens out. Just like getting stiffed on one table, the next might leave you enough to make up for the stiffed one.

So if you're used to making considerably more than minimum wage and one night you just arbitrarily don't, then yeah it can mess you up. Yes, but most of us don't work "commission" based jobs. If you choose to work a variable-pay job, then you shouldn't be complaining when your pay is variable. You compared it to a sales job, a salesperson would be upset if they didn't get paid for a week. Don't choose that way to get paid if you don't like it. People in variable-pay jobs have this issue ALL THE TIME. You don't have a successful day, you didn't make any money today. If it doesn't eventually even out, and you don't like it, don't do the job.
If you're a salesperson, which is how you wanted to compare servers, you can do your job perfectly, have a great day you think, and end up making no commission. If you want to put your pay in the hands of the people you serve, you take that risk. I've been at larger group tables which got auto-tipped and decided to leave a cash tip on top of that, I don't see anyone running back refusing to accept it. You take the bad with the good.

I did hte math on occassion and it usually evened out. Like you said Zib one table might stiff me but another would leave a very generous tip so it'd average out to $X per table. It was very very rare that I'd have a really bad day. Usually around here it happens in extreme heat, people just don't want to go out anywhere.
But it still balanced out becuase I wouldn't make shit in sales either. I'd get a bigger paycheck that week.
Would it be hte same as getting a ton fo super awesome tips, no. But I was hardly working for free. Like Hoops said it is a variable income job, it should come as no surprise that sometimes you aren't going to be making a ton of money.
