I make a really easy chicken soup with dumplings. I cut up a chicken breast (although I used thighs because that is what I had in the house), and I fry it up in olive oil. Then I do a couple stalks of celery, a whole onion, several carrots - all cut up into big pieces, get them fried too. Enough to get a little brown/carmelization, but still crunchy. I add 6 or 8 cups of hot broth (I make mine from bullion and warm it in the microwave.) Then, I let that simmer for a few minutes. I put in a good amount of frozen peas, and then I make the drop-dumpling recipe that is on the side of the bisquick box - 2 cups bisquick, 2/3 cup of milk. Drop the dumplings and the milk and bisquick turn the soup to be a little creamy - but not totally creamy. You let it simmer with a lid on for 10 or 15 minutes, and you've got a full meal. During the 10 minutes the dumplings are going I can clean the entire kitche, so afterwards, I have 1 pot to clean. It is a great meal.

I add sauteed shallots and wine to this mixture. Red or white wine, doesn't really matter. I spoon it over baked potatoes, or pasta or even use it as a filling for an omelet. I've picked up phyllo pastry formed it into cups, filled it with this mixture and served it hot or room temp. I love mushrooms! Not sure where I picked up my passion, since both parents hated them and we never had them growing up. I grew up with a whole bunch of Europeans from the Motherland. Picking and eating wild mushrooms was a passion. Every summer, there were boletes, chanterelles and porcini mushrooms gracing every kitchen I was in....drying on the stove, being pickled or being simmered with the aforementioned sour cream and onions. My mom and her friends would vanish at dawn and not return until dusk, coming back loaded with baskets and baskets of mushrooms. I'm not very good at it. I would pick what I thought were the same ones, but I would come home with a basket of Toxic Angels or Death's Head.

Weltz one of the best things about living in Italy, all the wild mushrooms! OMG they have so many dishes with wild mushrooms in it. It is like I died and went to mushroom heaven!

I never plan on meals. It's always a decision made at the time dependent on what I feel like eating and how much energy I have.

I half ass meal plan. I look around the store for what looks good....and I plan on cooking that eventually.

In your case, Angel, you can always feed the kids PB&J, then pour yourself some wine from one of those refillable wine bottles ;D

Eat it anyway. I hate eating out and DF loves eating out. We compromise but it still makes me grumpy to eat out.

Zib, I hear that! I don't *hate* eating out, but I'd really rather not. DD and her gang eat out at least once every two weeks and in between get drive-thru/take-out food at a very minimum of once a week. I see $$ with wings. And food cooked at home tastes better, not to mention that I know it's not something that tastes okay but is really nothing more than Chemist's Delight

We recently discovered these giant mushrooms in our yard. I live in the high desert. I know there are morels in the mountains here, because people pick them for their living when in season, but these giant puffballs were not something I expected to see here. The ones we found were dried, so we opened them and spread the spores in hopes of more of them growing next year. I understand it is nearly impossible to propagate them, but we figured it was worth a try. I have always been scared of mushroom picking and eating those picked by others. If you eat the wrong mushroom it can be a fatal mistake.

Eating out makes me fat and I'm trying to lose 10 pounds still. Plus, this house remodel stresses me and makes me tired so I'm sure that adds to my waist issues.

I buy bottled water. I don't know what the local water is like other than it has a lot of minerals and stuff in it. It leaves a horrible build up on my hair.

Between having a mother who was a terrible cook, having a zillion food allergies that nobody cared about when I was couch surfing as a child, and spending 3 years keeping body and soul together on a $20/week grocery budget, I don't have a lot of sympathy for picky eaters.

No, I was feeling bad about Formers post. Every time someone thinks they got a lousy childhood, you read someone who had it much worse. At least when my mother didn't want me, she shipped me to loving grandparents. I never couch surfed.

Just to be clear, the couch surfing was when my mother was taking my father to hospitals all over the country for cancer treatments.
