We have a white board where I write the activities of the week, and the meal plan. I also write who is cooking dinner (because the kids cook one day per week.)
I am pretty good about keeping that up, but I have fallen short over the summer. Yesterday I noticed that it stated today was the 4th of July and we were having the family over for a cook-out. So...oops!

Why not both? Or a combination of classic and trendy?
Chicken pot pie is a good example. You can have the classic with the dough or biscuit topping, or go trendier with puff pastry topping. They are both good, depending on your tastes.

We also really like steak salad. We cook the steak in any manner we can manage (grill, broil, pan sear - whatever) and then cool it down and slice it. Make a salad with mixed greens or arugula, plus lots of other veges. I have a balsamic vinegrette recipe that is really good with it. But, my son has discovered that blue cheese dressing is also pretty awesome. We usually get a loaf of frech bread. It is a good meal because it is cold, and by the time we eat, I'm over the fact that I had to cook in the heat. I dont have any salad greens right now. I have peppers from the garden, onions, a 1/2 cucumber, and some summer squash. slice what you have into thin chunks, add juice of half lime, some rice vinegar , a little salt, paprika, a can of black beans & corn if you have any. I also add mango to this - easy peasy black bean mango salad. No cooking with the hot stove. Kids get chicken nuggets again.

I asked this on another thread last night, but it seems to have been missed - late last night I remembered I had a brick of pancetta in the back of the fridge that I forgot to portion out and freeze. it's been there since last Wed (closed in a deli ziploc bag) in the back where it's colder, you think it's still good?

Yes - it has a high salt content, so unless you see anything funky, it is probably fine. Give it a good look over, and the heavy duty sniff test.

I have had this problem. Normally what I would do is tell the family that it is a hundred degrees out, which today is actually true , and I just can't deal with cooking today so I ask if anyone wants to go to a custard stand (AKA soft serve ice cream) for dinner. Everyone normally says yes. ;D Then later, after I have had my custard for dinner, I cook the steak or chicken on the stove in a grill pan and put the cooked meat in the fridge to eat later.

I had that problem last night. I managed to force down half the spaghetti then I had an apple. Rest of the spaghetti sauce went in the freezer. Tacos tonight. I'd get take out but we are about to get nasty thunderstorms any minute.
This is why I try to keep a decently stocked fridge/freezer so I have options. I've had to throw it all out three times in a year so obviously that isn't working too well!

We do our grocery shopping on Monday nights (less people!), so I menu plan for the week. Last night was supposed to be salmon, but I wanted pasta after yesterday's food cost thread, so I made that instead. Tonight will be salmon, so I guess I should hop to it.
If I have dinner planned and don't feel like cooking or it's not appealing to me at that moment, I can usually get DF to get a pizza. Hmm.... pizza would be good right about now...

We plan for the week but try to stay flexible within the week - - most always having the ingredients for 2 or 3 of our dinners defrosted/prepped and ready to go on any given evening. That way we can switch it up if we want. We just have to watch out that we don't let something slide too long and get forgotten and spoiled.

This is generally not a problem for me.
I'm pretty easy going when it comes to food boredom, (it always tastes good!) sort of like a pet being content to eat its kibble.
We have fall backs if DF doesn't feel like cooking though. Generally the plan is to slap some brown rice and lentils in the rice cooker and forage for self-serve toppings, like chili oil or whatever is in the sauce cabinet.

I picked up roasted garlic chicken sausage over the weekend, it was on sale....which rarely happens. I'm going to saute that with onion, button mushroom, and the rest of the kale (I'll blanch it first) I bought for the batch of soup I made last weekend. I'll toss that with some kind of curly pasta and some chicken broth. walla, I'll also have lunch for the rest of the week. (I turned the A/C on over the weekend when I was cleaning and trashing my kitchen cooking, I haven't been brave enough to turn it off yet)

DH is out of town... and I'm seriously considering picking up a pizza for the kids and an order of eggplant parmesan for me after spin class tonight. DH never wants Italian... so I usually get it when he's gone... YUM!!! Italian is my favorite. I am so hungry right now.

One of the joys of being single for me. I plan no meals and if I don't want what I have I do something completely non-YM and order a pizza or Chinese or whatever the hell I want I don't plan meals all that much either. I suppose if I had to feed more than two people on a regular basis maybe I would. I usually decide in the morning or the night before what I feel like eating. I freeze single serve portions of meat so I pull out chicken, beef, turkey sausage whatever and I make whatever sounds best with it that night. I do lots of stir fry or single skillet meals. Tonight was turkey sausage hash with potatoes, onion, and collard greens. Lunch was salmon cakes. I miss grilling out, but sounds like you did fine. My Dad was a big one for Dairy Queen or Frozen Custard for dinner especially when we were traveling. Does this mean I was raised badly?

I failed dinner. I made wild rice (yay), but my salmon tasted off, so I just ate wild rice and a veggie burger. I should have ordered pizza.

bummer, but at least the rice was good. I sort of failed dinner, too. it's still edible, but I learned that I should have listened to my first instinct and NOT bought a product. luckily, it can be watered down. even more luckily, I fixed up a packet's worth of broth before to taste before I started actually cooking anything, or it would have been don't buy this, it's ridiculously salty: *before I get flamed, it sounded like a good idea if I only need a splash of stock. I used it tonight b/c I'm actually out of stock after this weekend's cooking adventures. I typically like Swanson's broth if I need more than what's in my freezer for stuff - like Thanksgiving. this stuff shouldn't be allowed to wear the Swanson name. gross. take out this nasty shit, and the pasta toss was actually pretty good. chicken sausage, mushroom, kale, and I cut up a tomato at the last second to add another color. it looked funny to me w/o it. I know, I'm weird.

I usually use wine for the liquid when I cook... shocking I know.... I actually don't have any white wine right now. I'll have to fix that tomorrow! for something like this, red wouldn't have been right. if you cook w/wine, you have to KWIM.
