My wife retired from McCormick so I recommend their spices. Make sure you buy real vanilla and not imitation. No worries. I don't like imitation vanilla even in my chocolate chips. ;D

< No worries. I don't like imitation vanilla even in my chocolate chips. >
Cooks Illustrated had a recent article where they compared artifical and real vanilla. They could not pick out the dish that was made with one versus the other if it was cooked. Granted, now that real vanilla is a reasonable price (though you can pay an ungodly amount for some brands) I keep only real vanilla in the house but it was very interesting I thought. And CI is pretty picky about what brands they like when I've seen other test comparisions.

Got most of the budgety type stuff done this morning. The macaroni salad for this evening is made. We are having a combination birthday for Sis and Nephew tonight before he leaves tomorrow.
I have been to the store and got some okay deals. The early edition of the Sunday paper I picked up did have quite a few coupons.
DD started on the outdoor lights while I was at the store. Those are all down and all Christmas decorations are now in the attic.

I only use real vanilla.
So...I am making homemade Chicken Parmigiana for dinner. I know I know...it isn't diet food! But if I eat a smaller portion and skip the garlic cheese bread then I am doing better than most days....right? Right?

Absolutely. And done correctly, it can be diet food -- have you ever done it with grilled chicken instead of fried? (it's amazingly good that way).
I try to skip using even the real vanilla and go right for the vanilla beans. They're relatively cheap online, and provide the best flavor.

I had some of KFC's grilled chicken. It's surprisingly good and the last time I had their fried chicken was over 20 years ago and it was so back I swore off ever eating there again.

Next time, try grilling it -- it's great for eggplant parm too.

It was a total "When Harry Met Sally" moment.
I didn't make enough for leftovers. My family won't eat them so I have become really good at not making too much.

I love leftovers for the most part. I don't see what the issue with them is. Some dishes taste better the second day and there's a lot less dishes to wash up (total guy comment I know).

That reminds me of a joke
A man and woman are seated next to each other on a plane. After takeoff, the woman violently sneezes and excuses herself. 5 minutes later she sneezes again big time, and again excuses herself. She immediately sneezes and then sneezes again a few minutes later. The man, a little tired of the constant sneezes asks her "You keep sneezing, what's the problem?"
The woman replies: "I have a rare condition. Every time I sneeze I have an orgasm"
He says, "Oh, how unusual. I never heard of it. What are you taking for it?"
She says: "Pepper"

Not a guy comment at all. From my perspective, it isn't the dishes thing, it is not having to cook a meal the next day when you are getting home late from work, and you want something healthy!

I don't see how leftovers is a guy thing either. When I'm home, I'll cook during the weekend and the leftovers will give me lunch and dinner throughout the week, without having to cook a lot.

Thanks Peach! I did only have ONE serving of the Chicken Parmigiana and I ate it off a small salad plate so it wasn't as much as normal. I skipped the garlic bread as well and I also did NOT eat any of the pie my kids ate in front of me. Those pancakes look delicious.

I love pancakes....and not the stuff from a box...made from scratch with buttermilk only! Oh, and the fake syrup doesn't cut it either...it has to be real maple syrup. ;D

It must be morning because Peach fixed breakfast. Unless we're having breakfast for supper? Looks like it's going to be a long day because everything that needed to be done was done Friday and yesterday. I don't even have a book to read There's a pot of navy beans on the stove that will be ham and bean soup for supper, but it's not like there's anything to do to it.

I like it way better than Maple Syrup. It is hard to find and the rareness is reflected in the price but if you ever get the opportunity to try it go for it.

I had Red Velvet cake for breakfast, it was good. Last night we celebrated my Sis and Nephews birthdays. Mom meant to send home the left over cake with my sister and forgot. Sis lives out of town. We were still there, helping to clean up, so we got the leftover cake.
We will go to church this morning then I am not sure what we will do. I will probably go into work for a while this afternoon to get a jump on Monday since I have been out a week and tomorrow we not only have to do our end of month proceses but the end of year ones also.

Wow lots of good food discussed after I left. I'm glad virtual food is non-fattening.
Bought my vanilla yesterday, vanilla beans too pricey in the stores for me. Was surprised to see McCormick has a Premium Imitation vanilla. When I think imitation vanilla in the past I only noticed store brands. At least now I'm set to make my chocolate chip pan cookies.
