I have been having 1 egg, 1 egg white, 1 slice whole wheat toast, and 1 banana or 1 orange for breakfast. For lunch I have been having a tuna fish sandwich with low fat mayo, a sprinkle of cumin on whole wheat. For dinner I grilled 2 chicken tenders and roasted 6 spears of asparagus. The asparagus I drizzle olive oil on it and sprinkle sea salt then broil it for a few minutes. I also ate 1 banana for dessert. For a mid day snack I had a piece of muenster cheese. I still have to figure out my meal plan for the rest of the week. I have a huge weakness for butter and heavy cream... Where oh where are the REST of your veggies?

Molly I actually DO love veggies. I guess I didn't even pay attention to the fact that I haven't been eating as many as normal.

Looking over my November/December grocery bills (yikes! ), I really need to get back into weekly menu planning as well... so I have. I usually shop on Monday, so I plan Monday through Sunday. The plans aren't completely made around the shopping trip, though, except for perishables. I shop the freezer and the pantry for portions of the weekly menu, then shop the sales to add perishables. The shopping trips also include restocking of the freezer and pantry if the sale items are at rock bottom prices for my area. Truth be told, I almost always include a splurge item or two as well, such as a good hunk of cheese.... yum. Breakfast: DH usually has a protein bar with his coffee at work; DNephew will have eggs or cereal and a piece of fruit; I usually have a string cheese or two and fruit. Lunch: DH usually takes leftovers or goes out with his partners on a work lunch, I have soup, salad or leftovers whether I'm working at home or not and DN has lunch at school. Dinners: Tonight: DH and I will have a small roast that's currently in the crock pot, roasted vegies (brussel sprouts, broccoli and cauliflower) and maybe a bit of brown rice blend. DN will have leftover sauerkraut and brats if he's hungry when he comes home from his wrestling match (not entirely dependent upon whether or not they stop somewhere on the way home ). Tomorrow: Leftover whole wheat macaroni with jarred arrabiata sauce and pre-cooked hamburger from the fridge plus a few extra spices. Friday: Roasted chicken parts, vegies and sweet potatoes. Saturday: DH and I might just go out to eat while DN is at his wrestling match - yay! A rare occurrence around here. DN will have leftovers - same story as tonight. Sunday: Salmon or trout, any remaining vegies mixed with whole wheat orzo or couscous and spices, wedge salads. Ahhh... load off of my shoulders and no shopping to do!

Rumples I noticed you said nephew is a wrestler. Both are ds are. My oldest is 21 and doesn't wrestle anymore. Our youngest is 17, a junior in highschool. If you don't mind me asking what state do you live in. We live in Wisconsin. And are in the middle of wrestling season. ;D

Dinners we are having/had this week M: Ham steak, mashed pot & peas T: Chick pea curry, basmati rice & naan W: Pesto noodles, baked chicken nuggets & roasted cauliflower Th: Prob. lentil soup I have in the freezer F: Homemade pizza Breakfast is PB toast & milk for the kids & home brew tea (my indulge) & toast with laughing cow spread for me. Kids get a variety of snacks & lunches for school (we pack those at home) apples, oranges, carrots, cheese, yogurt, applesauce, homemade pizza, grilled cheese, PB&J, empanadas, hardboiled eggs, etc. We only drink water, seltzer or rarely ginger ale.

Sidney... we're in CA - western edge of the central valley. It's about the middle of the season here as well. I think we have about 5 weeks of the regular season left. DN is 14 and this is his first year of wrestling - he loves it so far.
To keep this post a bit on topic, I kept with the plan last night and have taken the hamburger out of the freezer for tonight. I am going to add salads to tonight's dinner as well since one of our local stores has iceberg lettuce on sale for 37 cents a head this weekend. I've been avoiding having salads as our vegetable lately because the price of lettuce in any form has been really high - $2.49/head or bag of romaine hearts. At 37 cents, I can use up what I have in the fridge and restock on Sunday.

Saturday we have a wrestling tournament so nothing gets done on that day. Sunday I think I'm going to make a Ham and eat it for dinner and then slice it up for sandwiches and salads for the week. Sounds good. I'm hungry today.

Okay, tonight we are trying a new recipe. The best thing about it is that I do not have high hopes. So, it can't disappoint me too much.
Tuna Sliders
Whole Wheat buns Tuna breadcrumbs onion, celery, garlic horseradish lemon juice eggs seasoning Olive oil
Baked at 350
I'm toping it with avocado, lettuce, tomato - maybe swiss cheese.
I am also roasting broccoli. I think I might skip the french fries and just let the kids have some candy after dinner.

Actually, they were pretty good. The real star was the avocado dressing - which was mayo, sour cream and an avocado all blended together. Gee, how can that go wrong? Overall, I wouldn't say the meal was "healthy" - but it was decent, and it pretty good, and it was probably less calories than most any meal that I would have eaten out. I didn't make any french fries or anything, just roasted broccoli - so the damage could have been much worse! This week we are having: 1) Chicken kabobs 2) Ham with roasted sweet potatoes and beets 3) Sloppy Joes 4) Zucchini Fettuccine (and I bought whole wheat fettuccine!) I'm not sure what we will do the other day - probably omelets or something else super easy.

Thanks! I was thinking of trying them with more eggs and no breadcrumbs and also no buns. We'll see how it goes. Our dinner menu for this week is as follows:
Monday: Fish (trout or salmon), leftover couscous with broccoli Tuesday: Crockpot roast with leftover couscous or orzo salad and roasted vegies Wednesday: Turkey noodle soup (will use up remainder of pasta and roasted vegies) Thursday: Turkey Chili from the freezer Friday-Sunday...... Unknown as of yet....

BREAKFAST : oatmeal w/ cinnamon and raisins (boring, but it's a fallback since we buy it in bulk at Costco) LUNCHES : pasta w/ red sauce, salad with crunchy winter greens, sliced apples SNACKS : - sliced clementine + 1 oz Spanish almonds
- 4 triscuits + babybel cheese
DINNERS : - roasted chicken w/ potatoes and baby bok choy
- chicken quesadillas w/ black beans and rice (x2)
- pan fried white fish, rainbow chard, and a Seeds of Change brown rice/quinoa blend
- salmon w/ spinach and red peppers
My grocery list for this week said things like "green stuff x2", and the chard and bok choy looked good. I kind of enjoy winter produce, because the good stuff is so intensely colored that you know it's good for you.

I moved the turkey noodle soup to Saturday since I need to boil a carcass, etc. and added in my missing days. Now, we're looking something like this: Tonight: Trout, couscous, sauteed kale and a wedge salad Tuesday: Crockpot roast, couscous or orzo, roasted vegies and a wedge salad Wednesday: Turkey chili (already made and in freezer). DN has a wrestling meet this afternoon/evening and he may or may not eat at home so this is our best night for freezer to stovetop cooking. Thursday: Bunless chicken burgers with lots of vegies and homemade sweet potato fries Friday: leftover roast done somehow - maybe in mushroom gravy over pasta, steamed or roasted vegies - or all lumped together as stew with no pasta Saturday: Turkey noodle soup Sunday: Leftovers and fridge clean-out

In my case it is beef and pork stewed with onions, garlic and spices until it is falling apart. Then some potatoes and carrots are added until they too fall apart. This mixture is then baked in a pie crust and eaten with ketchup. *drool*

I eat 4 meals/day. No snacking! I cannot snack on nutritious things, so I just plan out 4 meals. My BF is at 6AM so it works well for me. Usually looks like this:
BF: cup of coffee, no sugar TBS fat free milk. 2oz sausage patty on 1 piece white-wheat bread - I cook the sausage Sunday morning while making BF for the fam, and I just cannot stomach wheat bread.
10AM Lunch : WW SmartOnes entree, fresh fruit (right now I am stuck on clementines.
2PM Lunch : Soup and sandwich - always broth-based, fresh fruit
5:30PM Dinner : Usually something quick, but watch portions and do not eat everything I prepare. I will usually have 3-4 oz meat and a salad.
After filling up throughout the day, I am never in the mood for much at dinnertime.

Dh cooked our meals for the next 3 days. I love him. He made spaghetti for tonight. He made Korean chicken for Tuesday. We can eat leftovers at least 1 night.

I finally cleaned the fridge, freezers and pantry out last week... yay! I did wind up throwing away a few things like a jar of olives that had gotten lost in the back of the top shelf, but overall it wasn't too bad. I also found a few things that needed to be used asap, so I planned around those for this week and took care of a few other things that were languishing in the freezer. This week's dinners (things that needed to be used asap): Beef fajitas and refried beans (avocados and a frozen flank steak) Salmon patties, spaghetti squash primavera and wild rice (frozen cooked salmon, spaghetti squash) Teriyaki chicken and broccoli over rice with a salad (frozen teriyaki chicken, lettuce) Shrimp stir-fry over rice (frozen shrimp) Gnocchi with tomato sauce and a salad (lettuce) Prime-rib roast, roasted vegies and baked sweet potatoes (frozen prime rib roast, vegies in fridge will need to be used up by the time this one comes around) The seventh dinner will most likely be leftovers. Lunches will be from stuff that I put together over the weekend. A tuna casserole and tuna salad made from some ahi that slipped into the bottom of the freezer drawer, turkey-vegetable soup that was divided into one- and-two serving containers after dinner on Saturday night and put into the freezer, winter squash soup made from an acorn squash that was sitting on the counter and some frozen butternut squash - also in the freezer in small containers. I put the soups into the freezer just in case the tuna lasts me throughout the week. That will totally depend upon how much the two teenage boys who are here today eat at lunchtime. It's amazing how much food two scrawny boys can put away...

Ok I just got back from the grocery store (they really should serve tequila shots or something to make it less painful). Anyway, here is my menu for the week. Each dish will also give me enough leftovers for lunch the next day.
Tonight-Tacos Tuesday-Spicy honey chicken thighs-+steamed grean beans Wednesday-Lemon Basil Shrimp Pasta + roasted asparagus Thursday-Beef Daube Provencal lots of veggies in this. Friday-Kofte-not sure what veggie I will make with this Saturday-SuperFast Chicken Shawarma-not sure what veggie I will make with this.
All recipes are from Cooking Light and made with whole foods, no boxed stuff.
