Kiddo & I decided instead of ordering chinese food this week, that we would try and make it from scratch instead. We made General Tso's Chicken tonight and used this recipe. It was GREAT! Wasn't sure if it would be too difficult or not, so I did kinda cheat and stopped by our local chinese restaurant and brought home fried rice & eggrolls. But it wasn't that difficult and next time I'll try and make my own fried rice.
General Tso's Chicken
***Make sauce and refrigerate until needed:*** 1/2 cup Cornstarch 1/4 cup Water 1 1/2 teaspoon minced fresh Garlic 1 1/2 teaspoon minced fresh Ginger 3/4 cup Sugar 1/2 cup Soy Sauce 1/4 cup White Vinegar 1/4 cup Sherry 1 can condensed Chicken Broth ***Meat*** 3 pounds boneless, skinless chicken, cut into chunks 1/4 cup Soy Sauce 1 egg, beaten 1 cup Cornstarch 2 cups sliced Green Onions 8 small dried Hot Peppers, seeds removed
Directions:
Sauce:
Put everything into a quart jar with a lid and shake it up, then put in the fridge. Just shake it up again when you are ready to use it.
Meat:
Mix chicken, soy sauce, and hot peppers. Stir in egg. Add cornstarch, and mix until chicken pieces are coated. Deep fry 7 or 8 chicken pieces at a time in a 350 degree oil until chicken pieces are crispy. Drain on paper towels. Repeat until all chicken chunks are fried.
Place a small amount of oil (1 Tbsp.) in wok, and heat to 400 degrees. Add onions, peppers and stir fry about 30 seconds. Stir sauce mixture, and then add to wok. Cook until thick. If it gets too thick, add water to right consistency. Add chicken to sauce in wok, and cook until all is hot and bubbly. Serve with fried or steamed rice.

That sauce you show is the basic soy-ginger sauce used in many Chinese dishes.

sounds yummy. I may have to try this some time...I don't typically do fried stuff out for Chinese, except chicken fingers. anything I can try at home is worth a shot for future reference though, fried rice is one of the easiest things to do at home. all you need to do is heat up some high-heat oil (I use cottonseed oil) and saute some veggies, then add rice and soy sauce (I like tamari, a dark soy), cooking for a few minutes before digging a hole in the contents of the wok to make room for an egg. loosely scramble the egg before folding it back into the rest of the wok contents, cook a few more minutes and you're good to go.

Lettuce Wraps
1 lb of ground chicken, turkey, or beef 1 tsp grated ginger 1 tsp of minced garlic 1/2 C of cooked rice 2 1/2 C of vegetables (I used frozen, whatever I had in the freezer) Pepper
Sauce: 2 Tbsp of hoisen sauce 1 Tbsp of soy sauce 2 tsp of toasted sesame oil 2 tsp of rice wine vinegar (white wine vinegar works too) a dash or two of cayenne pepper or hot sauce
Mix all the ingredients for the sauce and set aside.
Brown the meat in a hot skillet. Once fully cooked, drain well. Add the garlic and ginger and stir until you can smell it. Add the cooked rice and vegetables. Stir until warmed through and then add the sauce to the mixture. Mix again until warm. Remove from heat and serve in lettuce cups or leaves. Enjoy!
