Grilled Potatoes
Here's how I 'grill' potatos. I like red potatos or yukon gold or Purple potatos for this. Tear off a large enough sheet of heavy duty aluminum foil to hold your potatos.
Four medium to small potatos scubbed and thinly sliced (leave on the skin if you like). Parmesan cheese OR rosemary (dried or fresh) salt/pepper olive oil
Basically you will layer the potato slices in the center of the aluminum foil. Between each layer put parm cheese OR rosemary and then salt/pepper and a splash of olive oil. When you run out of potatos finish up with cheese or rosemary, salt, and olive oil. Seal up the aluminum foil so it forms a packet. Put the packet on the grill and in about 45 minutes you'll have yummy potatos. If you like the "crunchy bits" that form when it gets really brown leave it on the grill longer. You can do this with any amount of potatos - just make a bigger packet and extend the cook time. A thinner layer of potatos will brown up quicker than a big pile. In a separate packet - you could clean a sweet onion - cut off the top and bottom make a couple of diagonal cuts almost all the way thru it. Tuck a few pieces of butter (or garlic) into the cuts, salt and pepper it. place on a square of aluminum foil and bring up all the edges and seal it. Place on the grill for 30 - 40 minutes. mmm mmm good!

I like to do packets similar to ATSiaRU's above, but mix it up some, by either adding different stuff or changing the seasonings, but the basics stay the same (tin foil pouch, sprayed, flipped, etc...)
Different stuff to add: butter instead of olive oil Thick sliced zucchini mushrooms onions
Different seasonings: Lemon Pepper Seasoning Salt Italian Seasoning and salt or seasoning salt different herb blends

I love grilled potatoes. I make these frequently during the summer on my grill at my shore place. I use Idaho or baking potatoes. I cut in 1/4" slices length wise. Lightly coat with olive oil, and season with salt and pepper. Place on a hot grill(400) for about 6-7 minutes on one side, or until browned with grill marks, then turn and grill for another 5 or so minutes.

For dipping sauce, mix 1/3 c sour cream, 1 tbsp tomato paste, 1/2 tsp garlic powder, juice of 1/2 a lemon (about 3/4 tbsp juice), a couple of splashes of worcestershire sauce, a couple splashes of hot sauce, salt and pepper (to taste).
