Not sure what I will be doing tonight. I can't make anything bulk due to me being away form home Tuesday night so maybe soup or pasta with pesto?

add some oregano to that, too. that's a good base! I typically just throw stuff in a coffee mug until it tastes good. sometimes it ends up too much for what I am cooking and I save it for next time.

tonight I've got enchiladas from some freezer diving. I bought corn tortillas since I didn't have any in the pantry (this is actually surprising). I have yellow rice and diced tomato for a side, and guacamole. there will be one more portion left over.

Monday night we picked up a pizza on way home from the airport. $21 total.
Tuesday night will be tacos. I'll say $6.
Wednesday night I'm thinking pineapple teriyaki chicken with rice and broccoli. Maybe $9.
Thursday night we are going out to a hibachi place.
Friday afternoon I'm leaving for the weekend so DH is on his own.

At this point I don't have any idea what's for dinner tonight and I really don't much care. Due to medical restrictions of no fresh fruit or veggies I'm really restricted. Maybe some mac & cheese.

And I should note I triple the recipe and keep it in an old school, sealed Mason jar in the pantry. As debthaven has said in the past, my future self appreciates it, especially on busy evenings.

I had one for dinner tonight, and actually threw out some of the rice because I was full. tomorrow, I have a meeting from noon til we're done, and lunch is provided. dinner tomorrow night is going to be a big bowl of the chicken soup I made Sunday night. I still have two large containers of it in the fridge.

I need to clear stuff from the fridge the rest of this week and next, before I leave for vacation. I have a package of bacon that needs to be cooked, and one of BSCB. I think tonight I'll marinate and grill (pan) the chicken, and cook off the bacon as well. there are romaine hearts, baby spinach, and other veggies for salads in the crisper.

I forgot to thaw hamburger yesterday so no tacos. We'll have those tonight.
I ate the leftover pizza. DH made a grilled cheese and had tomato soup. His was $2. It rained all day yesterday so it was soup weather.
I'll make the chicken next week.

Yesterday was hamburger stew. I used ground turkey instead of hamburger. Trying to stick to eating fish and birds as much as possible.

this morning, I prepped and marinated 2lbs of BSCB in a black peppercorn marinade and grilled it off on a grill pan. tonight, I'll probably make a Caesar salad and dice one of the portions over the top. either that, or make a sandwich with a piece. there's a loaf of scali bread to use up before I leave, too.

Today is going to be the third (and last) day of the Costco chicken. First day,made sandwiches. Second day, picked the meat off the carcass and threw the carcass into a stock pot. Took part of the remaining meat and made chicken pot pie. Tonight, I'll use the stock I made, the remaining chicken and wild rice and mushrooms to make soup.

Tonight I cleaned stuff out of the fridge and added some items. We had ham, cutting slices off a big ham, one day will make ham salad, later use the bone for soup.
Then heated some lima beans, sliced some tomatoes I had in the window ripening, very good, cottage cheese, left over baked beans from a can, leftover barbecue, DD ate that. Cauliflower, steamed, and green beans from the basement I canned. So lots of odds and ends used up.

Instant pot spaghetti and garlic bread for Monday's dinner. Estimated costs $9.
Tuesday night salmon for DH and fried chicken for me. My grandma made fried chicken Sunday before I left. I brought leftovers home. Sauteed zucchini on the side for both of us. Salad for me and a noodle side for DH. Maybe $6?
Not sure about the rest of the week yet. We might have a guest Wednesday and trick or treat is Thursday.

I haven't seen this recipe before, but it is very similar to a cheap weekday dinner I grew up with. we always added some cream before cheese, and it made a little sauce. definite winter staple for me.
