stir fry is an excellent idea, thank you! it's been forever since I've done that. it will have to wait til tomorrow, though. tonight, I added baby spinach and another layer of shredded mozzarella to the last of the BBQ chicken and bacon pizza I got Saturday. I'll be in bed well before 9pm tonight, can't guarantee 8.

Leftovers for Monday night. We had dinner with friends last night before heading back and brought the leftovers home.
Tuesday night dinner at the baseball stadium.
Wednesday night I would like to cook at home. Maybe spaghetti? I want something that doesn't create a bunch of leftovers.
Thursday night dinner at the football stadium. Then we are off to the airport for a long weekend away.

Tonight - avocado toast.
I get a baguette, and put out smoked salmon, prosciutto, several cheeses, avocado, dates, pears, cilantro, lime wedges, sliced nuts, and anything else I can think of. Everyone makes their own whenever they are here. Mix and match. Perfect for when we are going 10 ways.
I've got a salad too.

Tonight is going to be grilled corn on the cob with asparagus and reheated chicken thighs on the grill to enhance the flavor. I will than top it off with cookies and cream ice cream for dessert. It is just too hot for me to attempt to cook right now.

Wednesday night is going to be soft tacos or burritos. We have tons of tortillas. If I make burritos I can freeze any leftovers for later.

for some reason, I wanted rice noodles tonight. I know, so different from pasta. 🙄 but, I made enough for probably three more meals. it's kind of meh, so maybe I'll pick out the meat and veggies and make 2 leftover meals of it.
I velveted about 3/4lb of the chicken, and stir fried broccoli and onion with garlic, tamari and white pepper. tossed it with the softened noodles and scrambled an egg into the pan. pretty basic, and nowhere near enough "stuff" for all the noodles.
whatever. cheaper than takeout. now who wants to clean up the kitchen for me so I can just face plant?

I picked up a half lb of salmon from the market on my way home. I split the filet down the center line, to split with the pups. their side was baked unseasoned, they will have it tomorrow after flaking and cooling it. mine, though? I nailed a blend of hatch chili, cumin, garlic powder, Mexican oregano, and a number of other minor spices. I crusted my piece and baked both at 400 for 15min. that went on top of a Caesar salad with tortilla strips instead of croutons. I need to do this more often!

Cheeseburger pasta at the football game. $37 for two pastas, a soda and a beer. Traffic was awful and the stadium entry line was worse.

Happy Monday, everyone! Last night DH grilled pork chops. We are using up last year's half pig because another is on it's way soon. I made eggplant fries as a side. Tonight: Salmon (bought on sale), side veggie. $8 for 2
Tues: Crock Pot chicken Alfredo, spaghetti squash. $9 for at least 4 servings Wed: Ground beef something or other, side veggie. $5 for at least 3 servings Thurs: Leftovers $0
Fri: Pork sausage breakfast for dinner $4 for at least 3 servings
Sat: Pork chops, side veggie, pork and beans $4 for 2 servings Sun: Grill/smoke something Speaking of eggplant, DH's garden is coming along nicely. Eggplant and peppers are "this close", and squash and cantaloupe are hanging in there after a rough start.

feeling lazy tonight. I roasted a bunch of veggies and tossed them in a bowl with some grated parmesan and a slice of sourdough bread to mop it all up. all roast at 400 degrees, for various cook times.
cubed eggplant, half a broccoli crown, a plum tomato, cremini mushrooms and a few quartered tiny potatoes. all were tossed in olive oil, garlic powder, crushed red pepper for roasting.

tonight was supposed to be cool and rainy, so I planned to roast a turkey breast tenderloin and do up some fall sides. well, it was sticky enough that I put the A/C back on, and I'm still roasting the tenderloin and doing fall sides. $3 - ~1lb turkey tenderloin $2 - bag of cornbread stuffing $2 - carton of chicken stock for cooking various things $1 - jar of turkey gravy (this was lazy comfort food, I'm the only one eating....) $?? - spices, butter, EVOO, craisins to be chopped into the cornbread I haven't been to the basement cool storage to see if there are potatoes that need using up. I might make some garlic mashed, I might steam a veggie. or neither, idk.

Trying to keep the meals on the thrifty side. Angel hair spaghetti with homemade Bolognese (we made and froze several containers of sauce a couple of months ago).
Tomorrow night will be stir fry with meat culled from the manager's discount bin at Safeway. There is always enough leftover for lunch the next day.

last night was baked salmon with a bruschetta linguine. fish market gave me a huge piece of salmon, so the pups got the leftovers this am with breakfast.
$8 for fish. everything else was on hand and needed using.

I'm not hungry yet, but I'll be in bed early so I don't want anything heavy. dinner will likely be either a turkey or tuna salad sandwich with some chips. if I'm feeling ambitious, maybe I'll make the batch of pesto I've been talking about for a week. that would go nicely with turkey.

Since this is potato day and we triggered from chili cheese fries on a TV show, that is what we had for lunch.
Peach cobbler with cool whip. Snack later will be real food. Something with buns that we are taking to my son's tomorrow night. Also taking pasta salad.
Chicken Oriental Salad for Wednesday. Then what. Thursday. Maybe tacos. We can eat several meals from that.

I was so tired on the train yesterday that I decided to stop at the dive bar on the way home and order a small pizza to go. I had an adult beverage while I waited for my order. total including tip, $26, and worth every penny. I was in bed by 8pm.

Tuesday night DH had the leftover pizza from Sunday. I had a sandwich and vegetable soup my dad canned for me. Cost $1 maybe.
Tonight we are doing the steak and salmon with sides. $10?
I'm making food for Saturday night. Pulled pork, green beans, squash, hashbrown thing and cake. I'm going to say at least $70. It's dinner for 20 though.
