trash pickup is tomorrow, so I cleaned out the fridge. I found a broccoli crown I forgot about, and a package of white button mushrooms that needed using. there was also a package of ~1lb of turkey breast "kabobs" that would have still needed work to be used as kabobs. I roasted the broccoli, sauteed everything else, and tossed it with a 1/2lb of curly pasta, chicken broth, and fresh grated parmesan cheese. there's a bunch of leftovers for the next couple days as well. I used a can of broth, have saved the rest to refresh leftovers.
turkey was ~$4 can of broth ~$.75 veggies ~$3 cheese ??
this is a lazy comfort meal from my childhood, the specifics vary based on fridge contents.

I made my first baked egg dish. Butternut squash, onions, garlic and sausage as a kind of hash. I put some maple syrup on it. Added spinach, cracked eggs and baked it. Everyone liked it! I think I am revamping my whole "rotation"!
My next baked eggs dish will be a shakshuka with tomatillos instead of tomatoes. I love tomatillos.

I picked up some salmon from the fish market, crusted it with a mix of southwest seasonings and baked it. that went with a small Caesar salad with tortilla strips instead of croutons. very tasty.

I was gone from home yesterday most of the day, so last night was a Lean Cuisine spaghetti & meat balls dinner. Won't repeat that one, the spaghetti was really stuck together. However, Lean Cuisine and Healthy Choice were the 2 brands the dietician said were OK "as needed", but don't make a habit of it.

Healthy Choice has this line of frozen meals where it's a bowl and a steamer basket. usually the bowl has whatever sauce in it, and you pour the basket contents into the sauce and stir after cooking. I used to get one that had grilled chicken and broccoli with pasta and red sauce, that was decent. I have a hard time with the mushy texture that most frozen meals become, but b/c these are steamed, they aren't too bad.

last night, AZ and I finished off the leftovers of the turkey and veggie pasta I made the other night. I was going to cook something else, then he saw the bowl of leftovers in the fridge and started drooling when I described what was in it. basically, I reheated that in a saute pan with chicken stock and tossed in a bunch of grated parm cheese. dinner by the fire pit outside.

I boiled an egg, chopped it up, and made chicken salad. I buy "All-Natural" white chicken breast in a can. Whether it really is "All-Natural" is always up for debate, but it's probably at least as healthy as the rotisserie chickens you buy at Costco.

Stopped off at Falafel St Jacques and got a falafel for supper. Also picked up a 6 pack of what is, without a doubt, the best pita bread on earth.... soft, yeasty and billowy. They make it by hand and put a new batch in the oven every 15 minutes. It was too hot to handle. The place is run by an Jewish Israeli and a Muslim from Lebanon. They know their Middle Eastern food. It's divine.

We had BLT's with some big tomatoes.
I have had a few items that have been in the freezer from 2013, this heavy thick bacon was one. I figured it would not be any good, but I fried a couple of pieces and it was just fine so we had it. It was in very heavy packaging. I still can't believe it wasn't freezer burned, or had a funky taste or anything. Now that is old. I found some cheese out there too. It's from the bottom of it, when I cleaned it about a month ago.

Hope everyone had a relaxing weekend! Last night: DH smoked sausage fatties and grilled pork chops. I made turnip fries as a side. Total $14 for at least 4 servings. Tonight: Above leftovers. $0
Tues: Salmon, shrimp, veggie. $12 Wed: VIP section at a local event. Tickets are free as my agency makes a donation. $0 Thurs: Leftovers. $0 Fri: Dinner out before a concert. $?
Sat: Something easy as it will be a long day Sun: DH will grill/smoke something

this weekend was entirely NOT relaxing, and that's beyond okay. 😁
dinner tonight is whatever I eat from a box of Kraft dinner with a roasted broccoli crown* stirred in. I've already cooked off 4lbs of a ground beef/pork mix with kale for the pups, and I'm determined to be passed out no later than 8pm. with all the running around this weekend and barely eating on the run, I managed to lose 5lbs between Thurs am and this am. i can absorb the junk of Kraft dinner tonight lol...
*broccoli crown was from last week and would have gotten pitched tomorrow for Wed am pickup.
costs: $1 broccoli $.50 Kraft dinner $2 quart of milk I had to buy at the village market $?? spices, EVOO, butter
I may save leftovers, but unlikely. I intend to dig out the broccoli and whatever mac comes along in the spoon is what I eat.

Monday night grilled steaks, sweet potatoes and broccoli. Champagne with dinner to celebrate our second anniversary. Still cheaper than going out.
Tuesday night dinner and drinks at a free event.
Wednesday night something quick as we have an evening event. Still deciding between chicken sausages and black bean pulled chicken.
Thursday egg roll in a bowl maybe? I have 2 heads of cabbage and we need to get the pork in the freezer used up. My family is getting another pig and it will be processed and ready by September.
Friday night something out as we will be on the road.

I picked up a package of turkey breast tenderloins on sale yesterday when I stopped to pick up the ground meats for my pups. there were two large pieces of ~1lb each in that package, but I don't need to cook them at the same time. package was $4.xx.
tonight, if I have a couple lemons, I will make turkey piccata with one of the tenderloins. if not, I'll roast some other veggies and toss with shredded sauteed turkey and some pasta like I made last week. I'm not around for dinner tomorrow night, but can easily dispatch leftovers of both options this week.

Tonight is caesar salad with cheese tortelloni to bulk it up.
Tomorrow if not leftovers is going to be Artichoke and lemon Quinoa salad from Budget Bytes.
Thursday leftovers -- also going to grill a few chicken thighs for later in the week.
Friday going out to dinner with a co-worker.

salt lick tonight, it happens every four weeks or so. 🙄 I'm snacking on some potato chips while I wait for a frozen chicken pot pie to cook. the pot pie is a local brand, single crust, with no potatoes. so I'm also roasting the last few tiny potatoes, cubed and tossed in EVOO and a heavy handed toss of all the spices *I* put in pot pie that I know this one doesn't have. I'll pour the pie over the potatoes when I go to eat.
pot pie was $2, potatoes were getting pitched in a few days otherwise. chips are negligible, and the Cosmopolitan was probably $3 in ingredients.

Tonight we're having Jimmy John's before heading to the fairgrounds for more fun. I really like the JJ Unwich option. DH is buying, so figure approx $20 or so. Last night's VIP supper was from a local BBQ joint and included shredded chicken and pork, slaw, potato salad and baked beans. And a few complimentary drink tickets each.

Wednesday night was take out. We just didn't have enough time before we needed to leave to make our event on time. $19 for take out.
Tonight is egg roll in a bowl. I'm going to say $5. Cabbage and sausage were free from my family. Carrots have been in my fridge since at least June and need used. I tossed in the last 2 zucchini from the package I bought last week. I paid $1.89 for the mushrooms. Onion and other spices were on hand.
Friday afternoon we are headed out of town for the weekend.

Hope everyone's weekend went well! Last night I made salads instead of grilling since we neglected to pull anything out to thaw. Baby spinach, deli sliced turkey, blue cheese crumbles, a few tomatoes from DH's garden, avocado, cucumber slices, kalamata olives with a homemade dressing. $3 Tonight: Rotisserie chicken, side veggie. $9
Tues: Lobster tail (they're on sale-nom nom), shrimp, portobello mushrooms, veggie. $18
Wed: Crock pot ground beef enchiladas. Approx $8 for at least 4 servings.
Thurs: Leftovers. $0
Fri: Take out from? Sat: Leftovers from the freezer, side veggie $2
Sun: Grill/smoke something Have a fantastic week.

need to break a food rut this week. I don't even want the last of the turkey pasta toss from last week, that I'll be throwing out when I get home tonight. I think the other tenderloin might be too old to use up, too. I opened the package last Tuesday night, there's no way that's still smelling okay by now. oops. I'll take suggestions for any/all of the following fresh ingredients that do not require pasta, please and thank you. I've got rice and potatoes for carbs, if that helps. and sourdough bread. all that is coming to mind right now is eggplant napoleons as a side dish for......something? maybe just do a few and call it dinner. ~1.5lbs chicken breast tenders 1 medium eggplant 1 large zucchini plum tomatoes broccoli crowns baby spinach fresh mozzarella

I had a shopped salad for lunch topped with homemade chicken salad. Enough left for dinner tonight. I'm headed to the store shortly to get some fresh fruit, but I'm always leary of buying unripe melons and peaches etc. Maybe will only buy watermelon.
Going to stop for gas too as WMT has regular for $2.21.
