I knew all those steroids I took would kick in and make me want to eat a LOT. I had a salad for lunch, was starving. Was tonight too so ate a raw potato before dinner, then a hamburger, a bit of fried potatoes, and a few spoons of mac and cheese. I was so hungry after dinner, I chopped up a whole tomato and ate it. I will try to fill up on low calorie stuff, yesterday it was raw cabbage. Going to cut and fix a watermelon, I forgot to buy a whole pineapple today. Last one I had was soooo good.
It will be hard for a few weeks but since I know what is causing it, just have to be diligent and watch it.

strip steaks on the grill, potato salad, and corn. Sliced cukes and tomatoes, I ate way to much, it was good.

yesterday, my friend R and I stayed in the house all day. rose wine, trashing the kitchen, catching up. for dinner, we picked at yellow rice, veggie loaded pasta salad, and grilled tequila lime chicken. everything was already in the house except the BSCB. the package was $1.69/lb. we marinated and grilled probably 2lbs of it. there are a bunch of leftovers for the rest of the weekend.

Probably leftover fried chicken and mac and cheese. I'm sure my kid won't mind.
Oh. And a PSA. The milk was bad when I went to make the mac and cheese the first time around, so I tried almond milk instead. Don't do it. It was really weird and didn't taste good. The consistency was also off. I ended up scrapping the cheese sauce and made something else with the noodles. I got new milk to make the mac and cheese with the next day.

We just had a hodge podge, no AC so not heating up the house.
Hubs and I heated up home canned pinto bean soup and great northern bean soup.
Then he had minestrone also. I had some cheese and crackers and am looking for something else to nibble on. Also some garden cukes and tomatoes, not mine, sliced.
Little guy requested raw carrots, I also had mac and cheese so he had that too and a round piece of cheese. He had orange juice and some fish crackers. Told him I would fix a hot dog, no he just wanted more raw carrots.
DD had tomato soup with milk added with crackers. So we had lots of odds and ends for dinner tonight but everyone got satisfied, that's all that counts. I'm looking at some home canned applesauce in there I may have. Looks good. Need to use up the older canned goods anyway.

I still have leftovers of the tequila lime chicken (5 pieces), pasta salad (4 portions), yellow rice (1 portion) to work through. I brought some chicken and pasta salad to work for lunch. Still to cook for the week: 3 bone-in chicken thighs (sell by 7/11) ? BSCB pieces - cut 5 per chicken breast. not sure how many are left that didn't go into the T/L marinade 1 large eggplant 5 ears of corn 1 bunch broccolini -I can use up the BSCB pieces by cooking them for the pups no problem. -I think I might make arroz con pollo with the thighs. I can roast some of the corn w/serrano peppers and serve with this. or, corn and black bean salsa. TBD. the eggplant and broccolini is where things get interesting. I have a package of chicken sausage that was purchased with the broccolini, intending to make a variant of the Italian dish of orecchiette pasta w/sausage and broccoli rabe. I may just keep the sausage for next week and roast the veggies to toss with a pkg of Buitoni chicken tortellini. will report back when I figure out what I want to do.

I have no idea other than something on the road tonight for me. DH is on his own. But his parents and siblings tend to feel sorry for him when I'm away.
Tuesday through Thursday probably stuffed peppers and green beans. My grandma cooked both for me this morning and I'll load them in the cooler bag when I hit the road. Produce was leftover from this weekend's sale my dad and uncle held. Free to me.
I should also make a batch of chicken fajitas. I have sliced peppers and tortillas that need used. There's one 2 pound portion of chicken left in the freezer.
I am also taking back some sweet corn, cabbage, more peppers and tomatoes.
Friday night at the ballpark with DH'S parents. We bought tickets, they'll buy dinner.

Wednesday night burgers on the grill, green beans and corn on the cob. Costs $4.

I got home and didnt want to mess with anything new. if I don't end up cooking the chicken thighs tomorrow, I'll live. the package was $1.18. tonight, I cooked for the pups - ground beef/pork with chopped kale wilted in. in parallel, I roasted some cubed eggplant, grape tomatoes, asparagus, and baby bella mushrooms. I tossed the lot of that with the chicken tortellini I mentioned the other day. there's a ton of leftovers. wait, ETA, I forgot a snazzy pic. bc that's how I roll.

Dinner tonight - leftover vegetable lo mein (extra spicy) for me; DH will be munching his way through his teriyaki chicken. Bits and bobs out of the refrigerator and pantry for meals tomorrow.
Saturday DD2 and spouse will be here for a visit. DH will grill steaks accompanied by homemade baked beans, sautéed mushrooms and potato salad.

Leftover jambalaya for lunch (initially made with items already purchased in the freezer and pantry). Scalloped potatoes and ham from freezer for dinner. It's been a cook once, eat twice kind of month.

I ate at weird times today, including actually having something larger than fruit for breakfast. not terribly hungry, and have been craving soup lately. dinner is currently the last can from my stash of Campbell's Healthy Request chicken noodle soup with parmesan goldfish crackers, and a glass of pinot noir.
soup and crackers are only ever bought on sale. so maybe $2 between them. wine was I think $12 for the bottle.

Small beef roast and baked potatoes cooked in our Big Green Egg. Fresh cherries for dessert. The roast was from the manager's discount bin at Safeway; the cherries were given to us by DD2. Cost of the meal: under $10 and we have leftovers for tomorrow.

The quiche turned out FANTASTIC! Spinach, wild bolete and chanterelle mushrooms, finely diced red bell pepper, green onions and a crapload of cream and aged cheddar. OMG! Worth heating up the house for.
I'm not a baker. I don't make pie crusts, and I hate the ready-made pie crusts from the store. I cracked open a tube of Pillsbury crescent rolls and patted the dough into the pie pan to make the crust.

I am also not a baker, but have found a hack to make a fantastic quiche crust - thaw out some hash brown patties and shred them. press that into a pie plate, season as you like, and blind bake before adding filling. I would need to sanity check, but I think the blind bake is 450 degrees for 25min.

I had some errands to run across the next town over from home. there is a Chinese place over there that I love, so I got some takeout. I've been craving salt badly lately, this scratched the itch.
vegetable spring rolls and rice noodles with chicken. $14, and there will be a ton of the rice noodles left over for a weekday lunch.

Been too hot here to cook, so, we've been using up leftovers. Sometimes with a little too much creativity.
Last week, a whole bunch of take out. Averaged $16.00 per takeout. Thankfully it broke down to around around $4. per meal, per person after leftovers. (ordering out and takeout is expensive, but I didn't have to cook.) Tonight, Spaghetti with meat sauce and salad. Est cost, $6.00. Will be leftovers. Monday, since we used up all leftovers, Chicken, pasta, carrots and salad. Est cost, $7.80, a few leftovers. Tuesday, Thinking pork chops. Not sure what I'll put with them, Est cost: between $6-$8. Will be leftovers. Balance of the week, using up some of the leftovers, although I do take them for lunch. Otherwise, not sure.

Hope everyone had a relaxing weekend! Last night: DH made beer can chicken and grilled the shrimp stuffed portobello mushrooms I'd assembled. I had two awesome dinners in a row. It is upsettingly hot, and eating seemed painful.
On Saturday I made a panzenella salad with steak that was not hot. Not really cold. Sort of room temp.
On Sunday my husband and I made shrimp nachos. Chips with cojita cheese, which I toasted under the broiler for a minute. And my husband marinated shrimp in a lemon jalapeno jelly, and cooked them for a couple of minutes. I made a pineapple salsa which I can eat by the spoonful. We had black beans and avocado in top.
Both great without being too hot and heavy. Plus, both were fast to make, so I could go back to laying spread eagle below the A/C vent.

We ate to much.
First fresh corn on the cob for the season, it was really good, nice and sweet, plus tender.
First ripe tomatoes out of the garden and cukes. I got another bucket of cukes and there are more will donate them. Also 4 nice eggplant. I need to pick more cukes tomorrow.
I have so many blooms on that patty pan squash, I wonder of I should pick some off, it looks like a couple hundred, wow.
I had pork tenderettes with it and mac salad. We are all stuffed, I ate to many cukes and tomatoes. I cooked 3 of the pork tenderetts, DD and I split one, hubs ate one. Looks like I will cut one up and fix it with dog food for BJ. I saved the meat drippings, one day will make good gravy with mashed potatoes.

Tonight I made shrimp and broccoli in the instant pot. I made macaroni and cheese as a side. The broccoli needed used. The shrimp was the end of the bag. I'll say $5.
Tomorrow is instant pot spaghetti.
Thursday night is leftovers.
Friday night is reservations.
