So I decided to make mac and cheese with my chicken instead of potatoes. I'll have plenty leftovers for lunch for both me and Thing 2 tomorrow.

I didn't do the chili last night. Instead doctored up frozen pizza. Cost, $6.00. Still have some left.
Tonight, Beef and Peppers. Green pepper, .80, Beef, sale b1g1, so, $3.90, spices ?. Not sure if I'll put with rice or left over potatoes.

Grocery shopped last night: Monday: We had cheddar stuffed burgers with fried zucchini breaded in pork rinds, and Beanie Weenies for DH. Cost approx $5. Tonight: Going to bake a pork tenderloin (BOGO) instead of annihilate it in the Crock Pot. Cost $2 for the side veggie. Wednesday: I'll put a pot roast (BOGO) in the Crock Pot, shred it when I get home, and make enchiladas with it. Cost approx $8 for the cheese, tortillas and sauce. I might make rice for the side for DH, which was a free item. Thursday: Leftovers Friday: Takeout from? Saturday: Niece2's birthday party. I'm guessing there will be food there? Sunday: IDK yet 2 weeks on low carb and I'm down 10.2 lbs.

I have chili going in the small crock pot. We are home from school because of a winter storm advisory, but nothing is happening yet. That's ok. It's cold. I like hot soup when it's like this.

last night I boiled pasta to have with some reheated black bean chicken. I brought the rest of the pasta and the last of the chicken to work tonight, that was dinner.
no idea on costs. I'll just talk through the math. chicken was in the freezer since last March (free!). can of beans 79 cents, and half a jar of salsa would be $1.50 - for the crock pot full of chicken. pasta was 69 cents a box, I cooked about 1/3 of a box. so whatever that works out to. can't be more than a couple dollars total.

I think it was 1lb. if not, 12 oz. store brand curly pasta, bought on sale. one of those "stock up for a lazy dinner night" things.

This afternoon is choir practice, so had no idea where we're going to dinner after practice. Lunch however has a good chance of being Popeyes Ghost peppers chicken strips along with french fries.

Chicken breasts are on sale for $1.49/lb. I'm stocking up, we are completely out of chicken.

I discovered the dozen eggs in my fridge had a "best by" date of this past Monday, so I boiled 6 of them and made some egg salad this morning. still have 1 whole hard boiled left to slice for salads the rest of the week, too.
dinner tonight will be an egg salad sandwich on toasted English muffin plus a cup of soup I can grab at the grocery store when I run out to do some errands.

my errands took me near Whole Foods, so I went in. I needed hoisin sauce for home anyway, and that's the only place I can find the one I like. they had turkey chili on the soup bar, so I ended up with a bowl of that for $5, will save the egg salad sandwich for tomorrow night.

Finally! Success with the Crock Pot! I put a pot roast in it yesterday morning along with a can of beef broth, my homemade taco seasoning blend, and s&p. The house smelled delightful when I got home last night. It turned out moist and tender. I shredded it, put it on a rack to drain, and put it and shredded cheese into tortillas softened in enchilada sauce. Poured the remaining sauce on top with the extra cheese and popped it into the oven for about 10-15 min. DH loved it! (I had some of the roast with a bit of cheese, sans tortilla, to stay low carb.)

yay, Iggy! I guess you just have to know how it's going to cook and adjust accordingly. I think I am coning to realize that my little crock pot runs hotter than normal. I used that this weekend for a half batch of black bean chicken, and it was done earlier than I expected. this is the crock pot I typically use for pulled pork, since in the only one eating it, and the last few have come out dry bc I leave it the expected time. hmm.....things to think about.

Well, I had the chicken, but I made mashed potatoes. DS loves spuds.
The potatoes were delicious. I added cream, milk, sour crème, butter, a little duck fat, garlic and parsley.

dogmom (I love your screen name!) How did the kit turn out? The "kit" for the most part turned out okay. Your ingredients were more interesting. It contained a 4# pot roast, seasoning packet, carrots, onions, celery, a few small red potatoes. DH wasn't thrilled with the amount of fat on the roast. I doubt I would buy it again. Everything was together, packaged nicely, so, just had to wash the produce and throw it in the crock pot. I think it saved me some time. I admire your menu plans. As for dinner tonight...not a clue. Tomorrow night, three ingredient chicken. (chicken, dry Italian dressing and brown sugar) Not sure of the sides yet.
