I buy some microwave meals that I can do. Or have a can of soup. Last night I had a huge salad. Need to remember protein. I forget that a lot. I've started taking my vitamins again.

I had a can of Campbells chicken taco soup (or something like that) for lunch yesterday and a bowl of ham and beans last night. Not impressed with the recipe I used, it seemed very bland and uninteresting. I did put 4 containers of it into the freezer. Since I'm cheap, I will eat it, just not something I would go out of my way to cook again.
Tonight will be a puff pastry from The Fresh Market. This one is called chicken Geneva. It is chicken inside the puff pastry along with cheese and some variety of a vegetable. Will add a salad along with it.
on edit: Maybe I should do like Holly and have my main meal for lunch. I also buy some of the frozen meals from Healthy Choice or Lean Cuisine. I also like the Jimmy Dean breakfast bowls....they are $2ea at Walmart.

I prefer to eat my main meal at lunch too. We do it on the weekends for sure and during the week I just eat light at dinner and bring a lot of food to work.

We did both beef and pork boneless ribs because there wasn't enough of one kind to feed everyone. Holy yummy, Batman! I'll be doing that again. I'd guess it was about $10 for the meal. There was mac & cheese and mixed greens on the side. It fed 6 of us and I have the rest for lunch today. Having dinner with family tonight

YDS is sick with strep again. He gets a weird version of it -- vomiting, rash, it settles into weird places in his body. So, I've been making daily pots of homemade chicken soup using my frozen stash of homemade stock. Maybe $25 for the several pots?
It was also bitterly cold here earlier in the week, so I made homemade chili con carne (even used dried beans to keep the cost down) with cheddar cheese and sour cream for topping. I baked a double batch of cornbread to go with it and that was gone in a flash. $23 for at least 10 servings.
Last night we had grilled hot Italian sausages with beer-battered onion rings (didn't have them earlier this week after all) and steamed green beans. $20 for 5 servings. I also roasted a couple of chickens last night. $25. Those will appear in tonight's dinner in some form.
I see I average about $25/dinner. I try to keep costs down, but the volume of food I cook and the better cuts of meat add up quickly.

Yesterday we finished off the sausages and cole slaw. Today was pork chops and fries. Pickled beets have been the main veggie for the last few days. I actually like it, it's easier than cooking veggies every meal. I'm going to check out other pickled veggies at the local market.
Chops ~1.75 each, Fries ~$1, Pickled beets were a gift

1/21 Takeout from Polcari's. A local Italian style place. It was DH's delayed birthday dinner. Pizza - I'm sorry but pepperoni, pineapple and garlic sauce together is just revolting. Chicken Florentine 2 Mozzarella triangles Artichoke Margherita(sp.?) Too much $$. $68 or so. The drinks were done at home. I was going to have wine but my crappy ass corkscrew broke in the damn cork so I need DH to get the stupid thing out and he would not stop falling asleep long enough to do it. So I compromised and sucked down a few rum and cokes to use up some rum. I need to go buy vodka.

Later It is very easy mto make your own pickled beets:
1 can sliced beets, drained & rinsed 1 small-med onion thin sliced In a container alternatly layer the beets & onions Cover with a 50/50 mix of white vinegar & water. If that is too tart add a bit of sugar.
My cost is about 0.69 (beets), o.05-10 (onion) and penny or 3 for vinegar = 0.82 for 3-4 servings at worst. Usually a bit cheaper if beets & onions bought on sale.

I was surprised when I costed out the egg, potato, bacon, cheese, the cost to make was around 68 cents. (and that was using two eggs).

Tonight is chili. I'd guess about $7 to feed 5 with a couple servings leftover. Unless someone's friend comes over. They'll get my leftovers.

My only problem (it's not a problem for me) is I dislike cooking. I only buy a couple per month.

I believe that chili is on peoples minds. I will be making some this weekend.
Tonight I am going to finish the Cauliflower Soup that I made on Monday. -- It's really decent for a first time soup and I added crushed red pepper and ground black pepper to give it some flavor besides the parm.

I guess I should understand -- I tweak recipes all the time to avoid allergens, but for this mushroom lover, Chivken Marsala is all about the shroomz. ;-)

I'm all about the shrooms, too!

dinner tonight will likely be bar food when I head out to my roommate's show. I only just ate "lunch" (chicken salad rollup) about an hour ago, so who knows. I may not even eat, but I know I should.

Making a stir fry with London broil, bell peppers, onions and broccoli. Cost is probably $25. I made a double batch because my brother has to go into work for the weekend. It's hard to tell what food places will be open if any.

I saw a small container of cooked ground beef in the freezer a few days ago, so I think tonight will be spaghetti with marinara sauce with ground beef added and fresh grated parmesan cheese. Maybe add 1 slice of garlic bread also.
However, I also noticed some containers that had very little pasta in each one, there might be enough to add them all together just to get them used up.

See Later I DO once in a while exceed my base plan of spending <$1 or so each for lunch or dinner. This rare sale or a nice steak (NY strip ir filet) a couple times/year.

I'm so embarrassed by my dinners lately so I haven't been sharing them. They're very kid-friendly meals, that's all I'll say. Like tonight - I wasn't supposed to have DS since it's Saturday night but I wasn't going out in this storm. Dinner was bacon, biscuits (canned), baby carrots and blueberries. If it was just me I would have had leftover tomato basil soup. But dinner was a hit with DS so I guess that's the important thing.
