The sweet potato crust was actually really good in the dish, basically just thinly sliced sweet potatoes covering the bottom of the pan and prebaked. I love sweet potatoes but typically only ever have them baked with butter on them as a side dish. Crust is usually my least favorite part of any dish, so I'll have to keep this in mind for other potential substitutions. I do quiche often enough, and I am not a fan of the packaged pie crusts either. I almost always do a hash brown crust for mine. thaw out some frozen hash browns and crumble them. press the shreds into an ungreased pie plate and bake for I think 30 minutes. I will check and edit or confirm. once the crust is pre-baked, you can just continue as normal. the grease from the hash browns is enough to prevent sticking. ETA: pre-bake at 425 for 25 minutes. The hash brown crust sounds good too. I made the quiche the other night with the sweet potato crust and it was yummy! I just wish my family wasn't so picky, lol. Tonight's supper is what we just call Beef and Noodles: Browned beef short ribs cooked in water with some onion, salt and pepper mixed with homemade egg noodles; served over mashed taters. And a veggie side, tbd.

After my choir Christmas performance at 3 PM today, and the Worship Choir at 6 PM for their Christmas program, it's either going to be out to dinner for something light or just come home and try a fried egg sandwich.

we went a little nuts with brunch today, and it was just the two of us instead of the typical 3 or more on a weekend brunch. blueberry pancakes, home fries, scrambled eggs and breakfast sausage. so I may just have some leftover cold pizza from last night.
at some point today, I do intend to make that pork recipe I posted the other day, for lunches this week. I bought 1/2lb of pork, so I'll do half the recipe. that should be enough for a few days.

Game food (chips and salsa, mozzarella sticks and marinara, potato skins, buffalo chicken bites) and leftover American Chop Suey. I'll steam some broccoli to pretend that it is a healthy meal.

Night before was spinach lasagna, DD begged for spaghetti so had that last night with home canned sauce. Then everyone wanted cookies, so I made a double batch of sugar cookies, we so pigged out. I am ruining our dieting efforts, damn but so hard at the holiday and dealing with someone that hasn't had what she wanted to eat for a year. I never saw anyone appreciate food so much, makes me sad.
Ok, got to get ready.

I ended up making Split pea soup yesterday but for some reason it seemed to take forever as though I used too much water or not enough split peas even though I followed the recipe as usual. I don't know, I might just have to wing it next time.

dinner turned out to be half a box of Kraft dinner. roommate worked late, I wasn't hungry and was really only eating something so I'm not hangry in the morning. he pulled in the driveway as the noodles were boiling. he didn't want the other half of the box, so I pitched it.

Loaded quinoa: sautéed herbed chunks of BSCB, sautéed onions/red peppers/green peppers/spinach/broccoli all mixed with rainbow quinoa.
Cost? $21. Got 4 dinners out of it (including 2 teenagers who each probably ate at least enough for 3 people).

Made a pizza last night. Maybe $7.50. I used up stuff I had at home and it was ready within 25 minutes of me starting it with little effort. I was exhausted last night so that was good.

I picked up a few things on the way home, intending on chicken marsala since I didn't get that last night. the mushrooms went in the fridge and the potatoes in the cabinet. I ended up sautéing a BSCB, and tossing it and a package of buitoni chicken and prosciutto tortellini with a bruschetta topping that I added some diced prosciutto to. roommate didn't want the other half, so now I have lunch for tomorrow or Thursday. woot!
cost? $7 or $8 for two servings. the chicken was not on sale. (I know...)

Last night was leftover ham and steamed green beans. We won't talk about how much I paid for the ham Sunday morning. Guests were coming for football and the pulled pork burnt overnight so I had to figure out something.
Tonight I'm taking 3 of DF's nieces to Chick Fil A before going to a paint night.

I think I am seeing more of some of them than their own families. They're good kids, but they are a hungry bunch and the grocery budget is getting a little expensive...

I remember lots of cold cereal for dinner when I commuted into Boston and worked full-time. Kudos!

I am working on cooking things out of the freezers, going to use things up before restocking otherwise it will go bad.
Tonight was 2 ribeye steaks, made fries from fresh potatoes, and a salad plus some hominy. Had a dessert tonight a Jello brand cheesecake with strawberry topping was good.
Last night was a frozen spaghetti for DD, frozen mac and cheese for hubby and hot dogs, also corn.
I have a lot of food that needs used so going at it.
Everybody including MIL and her sister is wanting either pizza or cheeseburgers for Christmas dinner, like wow. I want baked turkey and dressing, guess I will make it later.

Ate dinner out, DD had popcorn shrimp, I had whole fried catfish, DH had fish fillets, $45. We need to quit eating out so much. Spent $55 the other night for dinner.

woke up all achy and sick this morning, and then survived a miserable 2.5h drive back to MA in the pouring rain. I'm now in my pajamas, waiting on a big pot of soup that's simmering. I stopped to pick up bone-in chicken on the way, and found a "sell by tomorrow" sale on split chicken breasts. win!
soup costs: $2 - carton of l/s chicken broth, to bulk up the boiling water $2.45 - 1 chicken breast (I'm actually boiling both, will make chicken salad out of one) $.50 - half a bag of frozen mixed veggies $.25 - ditalini pasta $.50 - half a can of diced tomatoes
$5.70 total for a 5qt dutch oven full of soup.
