There's no way I could go full-hog (pardon the pun) vegan.
BUT if I had to, wouldn't starve - pasta with eggplant or tomatoes,salads, Oriental stir-fry with noodles, rice and veggies, breads, dairy, yogurt, etc - but I'd really miss the meat. I mean really MISS it. I can't imagine depriving myself of those proteins. What do you do for holidays? TofuRkey?

My breakfasts are meatless. I have a cup of original Fiber One cereal with unsweetened vanilla Almond Breeze, and a banana added to a protein shake that I make in the blender with added ice. It's 355 calories, 38g of fiber and there's 21g of protein just in the shake, plus another 4 in the cereal, 1.2g in the banana, and 1g in the Almond Breeze. That's 27.2g of protein for breakfast.
For variety, I switch off from vanilla and strawberry. Later this fall, I plan to substitute the banana for 1.25 cups of canned pumpkin (same calories) and make PUMPKIN protein shakes.
Of course, while this WOULD count as a vegetarian breakfast, it doesn't qualify as a VEGAN breakfast because the brand of protein shake I use contains protein from soy as well as whey. It's gluten free and kosher, but it's not vegan. (I am sure that someone out there sells a vegan protein shake if you're opposed to a small amount of whey protein in a protein mix.)

Currently, I look for 35 percent of my daily calories to come from protein, 15 percent to come from fats, and 50 percent of my calories to come from low glycemic, primarily veggie carbs (with limited other starches). This works for me. My breakfast protein is primarily a protein shake. My lunch protein is invariably lean turkey or lean ham or tuna. I strive for more variety with my dinner proteins, limiting myself to beef only twice per week. The other nights, I opt for 3 servings of seafood (mainly salmon and tilapia, some shrimp), lowfat Lactaid cottage cheese (I'm lactose intolerant) no more than twice per week, and 2 servings of chicken. (I'm not much of a lamb eater, and it's hard to find ostrich meat around here any more. Since I eat ham and turkey and tuna at lunch times, I usually don't repeat that for dinner.) Once in a while I might grab a lean pork chop, or some other seafood (I love calamari steaks!) Because I am lactose intolerant, I don't eat very much dairy, as you can see. And my evening snack? Egg whites. Hardboiled egg whites. 15 calories per egg ~ a great addition to my diet!
One thing you might consider, to liven up your meals and your menus, is just to increase the variety and number of vegetables that you're eating ... and decrease the amount of meat/dairy that you're eating. When I started on my healthy eating quest 4 months ago, I seriously ramped up the quantity and variety of the veggies I was eating.
Here's what I ate today:
Banana Gala apple Romaine Spinach Mustard Greens Collard Greens Turnip Greens Tomatoes Carrots Cucumbers Corn on the Cob Hearts of Palm Beets Baby bok choy mushrooms yellow pepper (That's 2 fruits and 14 different veggies)
How many different ones have you been eating lately? There's a fair amount of protein in a lot of veggies ... you might find that you're getting plenty of protein with just reducing (rather than eliminating) some meat from your diet?

I eat their sausage every morning for breakfast. it's not going to taste like meat but I prefer it to regular sausage (doesn't give me indigestion). maybe get some vegan/vegetarian cookbooks for ideas.

Unless you tell us everything you eat then it makes it rather difficult to offer up suggestions of vegan meals that fit within your list of criteria and are new and different from what you currently eat.

I tried going completely vegan a couple of times. Actually I was following the Eat to Live book, which has you eat 2 pounds of vegetables a day one raw and one cooked. I did seem to have more energy, but found it hard to stick with long term and DH wasn't fully on board. So now I just try to eat as many vegetables as possible. I notice that when I don't try to eat a lot of vegetables that one day I notice I am eating tons of meat and starch.
I never really liked tofu either, but the morning star crumbles are good though I always used them either in soup or in a "one pot" type meal which you don't care for. I think it will be harder for you to be vegan if you want to eat 3 separate things at each meal. You will either have to rely on a lot of meat analogs which I don't think is healthy in the long term or you will have to be okay eating a bunch of vegetable plates.

Thyme, I thought your list in the OP was very helpful. You've identified textures and your preference for vegan/vegetarian foods that DON"T pretend to be meat. I don't have time to pull my recipes but here's some ideas to google (I've used on-line recipes for these):
Tempeh stuffed Peppers or Quinoa Stuffed Peppers. Tempeh is a wheat gluten kinda thing that's a "staple" in I think the Pacific Islands area of the world - it's not something Marketing made up. You can get it at Trader Joe's in the refriderated section (you can also freeze it). Whole Foods has it too. It's a small little package. Quinoa is a grain. I've fed both kinds of stuffed peppers to Carnivores - with the understanding that the stuffing wasn't trying to be "meat" it was just a different variation on 'stuffed peppers' and I had no leftovers and licked clean baking dishes. Officially, no one "liked" the icky vegan stuffed peppers - but they all wanted the recipes or wanted to know if I'd make them again for PotLuck dinner night.
Have you tried lentils - specifically in a 'stew' with tomatos and something like spinach/Kale with a curry powder as seasoning. I prefer mine dry-er so I don't always add in the liquid from the canned tomatoes. I know this may fall into the 'wet food' category for you.
I made a super yummy 'salad as a meal' by combining a Kale and Blueberry salad recipe with cooked lentils. the vinegrette dreassing was the thing that tied it all together.
I'd also recommend checking out books by Nava Atlas (Vegetarian Express or 5 ingredient Vegetarian meals) The recipes generally don't call for a lot of fancy or weird ingredients AND each recipe comes with a 'menu' idea for what to serve with the dish (usually something else from within the cookbook OR something you might have on hand like a good crusty bread or a platter of veggies of your choice)
There are so many yummy vegetarian and vegan things to eat.... mmmmmm
(I'm not particularly fond of the texture of tofu either - but I've discovered pressing tofu to remove some of the water from it, and then marinating it and then baking it. To. Die. For. My non-vegetarian friend thought the garlic/ginger/soy marinated baked tofu was great hot with veggies/rice OR cold on a salad. She said it had wonderful flavor and the consistency of cheese. I shared some with her last year during Lent.)

Brown Rice with Black-eye peas and gravy. Roasted Vegetables: Potato (i like red so not peeled too much), garlic sections, fresh green bean, carrot, onion, bell pepper. I like to melt cheddar cheese for on top after done cooking but if you don't like cheese skip instead. Taco or taco salad made from soy meat crumble with lettuce, tomato, salsa, cheese. Egg Sandwich. Very hard for me to eat if no bacon included! Sandwich roll that is long bun, sliced hard boil egg, butter or mayonnaise, salt, pepper. Can make egg salad instead. Salad with nuts like almond and pecan or walnut, feta cheese, carrot stips, frozen peas, eggs, grapes or apple, balsamic vinegrette. Greek Yogurt is very high protein, but careful how much sugar in the one you pick. Get plain and add wheat germ for ton of protein all together. Lentils are good side dish for protein. Also quinoa I just make plain with butter for side. Peanut butter on toast Black bean chips (like taco chips) for side or snack or make into taco plate. Pancakes. Add ground up oatmeal or almonds or peanut butter or banana into mix for high protein. Avocado smash on toast.
If you buy protein substitute, look careful at label, might have alot of gluten. Can give you other trouble.
Look at recipes for clean eating. This is for more health, not getting rid of meat. Maybe they have more appeal to you.

I want more healthy options in my go-to list. I don't feel like I need meat twice a day, so I could go vegan for lunches or whatever. I would say "Vegetarian" but when I look for vegetarian meals they all seem to be loaded with cheese. I do love cheese - but I want more plant based foods. You don't have to give up being a carnivore to eat healthy. Have toast, fruit, etc for breakfast, a leafy green salad for lunch (Tossed green salad with tomatoes, shallots, etc, or spinach salad or Caesar salad - or a veggie wrap.
You can still have some meat for dinner.

Thyme, I know this is an old thread, but I wanted to comment on it since I am trying to switch over to a more vegetarian/vegan diet. I just ordered a few new cookbooks to help me with some recipes and I also have been finding things on Pinterest. There is a vegetarian "burger" I am really excited to try that is made with a bunch of different veggies and black beans. theviewfromgreatisland.com/2013/06/the-ultimate-veggie-burger.htmlI also have several recipes from Young and Raw, but they are mostly just salad type things at this point. ETA: the "burger" does have egg in it, so not vegan.

Funny I was thinking about this thread the other day so will post what I had to offer at this late date. If anyone gets ZLiving channel (used to be Veria Living) check it out. For Vegan/vegetarian (not necessarily gluten free) meals google Ann Gentry recipes, Naturally Delicious recipes. I just checked out the only book of hers at the library. I'm not vegan but some of her dishes just appeal to me so going to give them a try. I'm not much on the tofu/tempha (sp) but she does a lot of veggie dishes that sound pretty good. Personally I think ZLiving website leaves a lot to be desired so that is reason I suggested googling AG and her show. There is another shows called Peggy K's Kitchen Cures that is pretty good. Just thought I would throw this out there if anyone still interested.

Try this quick chickpeas recipe:
Ingredients: 1 can of chickpeas 1 TBSP tomato paste 1 tsp Garam Masala 1 tsp oil Salt to taste Water as needed
Heat oil. Put in the tomato paste and stir for a minute or two. Add in some water, stir to mix thoroughly and cook for another minute or two. In the meantime, drain and rinse the chickpeas. Add it to the tomato paste+water combo. Add salt and Garam Masala. Cook for 5-10 minutes. Adjust the water and seasonings to your comfort level - more watery or less/more spicy or less, etc. Let it sit for another 10-15 minutes to allow the chickpeas to soak up the flavor.
You can eat this with hot rice or bread.
You can substitute red kidney beans, great northern beans, etc for chickpeas for variety.
You will find a lot of Indian recipes are vegan. There are those which have milk/cream/butter. But you can get many more which are vegan. Many are meant to be eaten with rice or Naan (flat bread). So, that would give you the "separate" items that you want.
Don't be scared to try Indian - it might look like a lot of ingredients, but if you have the basics, it is not hard at all. Things to have on hand: Garam Masala (this is not curry powder - curry powder is actually not Indian) Cumin powder Coriander powder Turmeric powder (a good antiseptic and antibiotic) Red chilli powder
With just these 5 powders, you can make decent Indian meals. If you want to be a bit more daring, try stocking these condiments: Mustard seeds Cumin seeds Dry red chillies Tamarind paste (can substitute tomato paste/lemon or lime juice for this - basically adds acid)
Roast mustard seeds and cumin seeds in hot oil until the mustard seeds start to splutter. Doing this as the first step in a dish or pouring this hot oil mixture on the dish as the last step gives the dish a special flavor.
Of course a lot of garlic and ginger are used, but these are not uniquely Indian.
Good luck and hope you can find more vegan meals.

Do you want more healthy options, or more vegan recipes? I regard vegetarian as merely a poor dietary choice. I regard veganism as a full blown eating disorder. I read the OP to say that the OP is a carnivore who wants to eat less healthy for the sake of "variety". My suggestion is start exploring some more meat options- especially organic, grass-fed beef; butter, real full fat cheeses, healthy wild caught salmon, tuna, and other goodies of the sea.

I don't eat chicken, pork or red meat and I am healthy as a horse. But I do eat salmon, halibut and other fish. I don't eat store bought fish though. I happen to be lucky enough to have a son who fishes the Alaskan waters every other year and keeps me well stocked. Also live on Gulf Coast and can get shrimp, crab, red snapper, red fish straight off the boats - it pays to have friends in the fishing industry who give a call every now and then. But if it wasn't for eating fish I would be a vegetarian. I've never met a vegetable I didn't like or a chess for that matter I think the OP really just wanted some healthy meals to supplement meat free meals. That is doable without getting all freaky.

I'm jealous of your Alaskan supply. I live on the Banana River and fish for dinner a couple times a month- the rest of the time, I buy it fresh like you do. Shrimp is extremely healthy, though I worry about the oil spill and especially the dispersants.

Technically, OP is an omnivore. We have a local company that goes to Alaska every year, flash freezes and brings it home... Not cheap, but good.

Technically, OP is an omnivore. We have a local company that goes to Alaska every year, flash freezes and brings it home... Not cheap, but good. We have a similar place. As you say- not cheap, but good. I find as I get older, and especially as I've cut out added sugars, and cut way down on carbs, especially grains- and especially wheat-- I eat less overall, but what I do eat is very, very good.

I read the OP to say that the OP is a carnivore who wants to eat less healthy for the sake of "variety". My suggestion is start exploring some more meat options- especially organic, grass-fed beef; butter, real full fat cheeses, healthy wild caught salmon, tuna, and other goodies of the sea. I have eaten every type of meat you just mentioned, as well as just about every other kind of meat I have heard of. I am bored of meat. I eat meat two or three times a day. I want to find another source of protein so I don't have to eat meat every day. I am bored to fucking death of meat. If you must, try quinoa.

And my guess is that you're not getting good meat, and/or you just need to come up with better ways to serve it. Do you have a smoker? Have you ever smoked your own trout, or wild caught salmon? Smoked a turkey? Have you made your own sausages? Ever go hunting for wild boar, turkey, deer? I still have 400 pounds of boar meat from last year in the freezer, and I'm going again in two weeks. I shot two turkeys last month- smoked one of them. When you add it all up, it's far more expensive to hunt a turkey-- but there's really no comparing a wild turkey to the 'ol store bought big name brands.
