Damn I really like this challenge. I've only been having two veggies a day, so I'll up that to 5. I'm in, I'll grocery shop on Friday.

The cuke was ok w/white wine vingar. Will try with rice & balsamic to see if I like better.
Only did 4 veggies + 1 fruit on Thur. WAAAY below what I deem acceptable. Accepable is 6 and prefer 8 plus 1/2 fruit.

Thursday: Romaine, cucumber, canned tomato (in the chicken chili), more Romaine, green beans. Had strawberries on my salad, and blueberries in my cocktail.

Did ok on Fri. 9 different veggies + 1 fruit.
Even though today is junk food day I am going to try to be decent UNLESS I go out to lunch w/a friend.

I ate more veggies than I could count, there was tons of vegetarian food there today. I went to my late sister's Life Celebration.

Today was only two veggies but they were extra good. My SIL brought some fresh from the field broccoli, which I steamed. I had picked up some corn on the cob earlier in the day. Those two things were my dinner. Yumm.

Did ok for a junk food day: 4 veggies 1 fruit.
I am aiming for a VERY heavy veggies day today. Want to break the weight plateau I have been sitting at for 6 days.

Roasted an eggplant & turned it into a dip/spread. Afer I roasted it up, added a bit of olive oil and a bit of sesame oil, yogurt, peanut butter and seasonings the 1.37 lb eggplant filled a 1 lb deli container. I did forget to add a bit of lemon juice which I will do as I use it. It is going to be my breakfast today w/some cut up veggies (carrot, zucchini, red pepper).
had 7 different veggies on Sun + 2 fruits.

Wed was NOT a good day at all. Gor a FREE chocolate muffin at corner bakery. Picked up my order and got 2 FREE bialys. Did NOT eat at all healthy entire day. Will redo my meal plan as Sat junk food day has already been done on Wed. Will eat 'properly' on Sat.

So far today: cooked spinach, mustard greens, collard greens and turnip greens, and a salad: broccoli, hearts of palm, carrots, mushrooms and radishes. (9 different veggies)
Dinner will include: corn on the cob, zucchini, romaine, red pepper, tomatoes and pea pods. (That will be 15 for the day!)

Was VERY lax on veggies Sun too.
Mon did good - 11 veg + 2 fruit.
Tue did good - 8 veg + 1 fruit
Today should be good. I am going to try making that cauliflower crust pizza. I'll top w/more veggies - red pepper, broccoli, mushrooms. Keeping to my 'basic' meal plan, it is my 2nd veggie meal this week.

I usually average 10-15 different veggies, most days. And 1-2 fruits (usually banana, sometimes an apple) It's cool to see what everyone else is eating. (I never eat peas, if I can help it!) I think there's still a cucumber in the fridge. I know that there are tomatoes (I just picked 5 different varieties from my garden). And I need to clean/prep some radishes. Hmmmm... is it lunchtime yet?

I don't do peas either. Just do NOT like the starchyness. Same for lima beans and most beans.
Was not too good on Wed after all. Lunch was GREAT but fell apart at dinner. I really need to have my dinners all pre-prepared.
Doing another veggie meal (3rd this week) today and a fish/pasta dish too.

Holly, having dinners prepared ahead of time helps me, too. I've been trying to batch cook on the weekends more often. Last weekend I assembled a pan of enchiladas, boiled eggs, made a mock tater (cauliflower) salad, washed and prepped fresh produce for lunches, etc. Yesterday's veggies: Spinach, cucumber, Roma tomato, celery, and zucchini. I also had fresh blue, black and strawberries.
