WHY NOT JOIN THE "VEGGIE CHALLENGE?"
The goal: to eat at least 5 different VEGETABLES a day. (No fruits in this challenge, but we won't argue about whether or not cucumbers, olives, tomatoes and avocadoes are veggies or not!) Every time you eat a vegetable, list it here! (Note: you actually have to eat a vegetable as a vegetable ... no drinking tomato juice and counting it as a tomato ... unless you personally juiced that sucker yourself! And hummus doesn't count as a "garbanzo" bean.) Yes, we count legumes as veggies (except for peanuts).

Green Zucchini .49c a lb, 1lb Yellow Zucchini . 69c a lb, 1lb Lactino Kale 2 bunches @ 1.29 a bunch Diced Tomatoes - 1 28oz can @ 89c Carrots say 1/2# at 89c a lb. (Italian Sausage Soup for lunch, more veggies then sausage ) Add 1# sausage @ 2.79, 1 box beef broth at 1.99 and 1/2c whole wheat orzo pasta for about $1. Ohh, beans count!!! Do I get a bonus for canneli beans? 1 14oz can for .89c

Lunchtime veggies today:- spinach
- broccoli
- carrots
- tomatoes
- mushrooms
- radishes
The radishes were on sale, 2 bunches for $1 ... so I picked up four bunches on Friday. The tomatoes are from my garden. (I have overachieving mutant tomato plants). The baby spinach wasn't on sale, per se, but it was a good price from Trader Joes. I bought it because they were (gasp) OUT of my beloved Southern Greens mix (spinach, collard greens, mustard greens, turnip greens.) I will try again on Thursday morning for the Southern Greens.

5 different veggies!
Good grief! DH won't eat more than one unless it's peas & carrots or frozen mixed vegetables.
Well, not much variety, but in 2 days, I ate an entire pint size box of brussel sprouts by myself. DH refused to eat the single brussel sprout I put in his plate. I roasted them yesterday and steamed them today.
I finished the leftover peas and carrots.
My granola had flax and pumpkin seeds in it.

So lunch will include mushrooms and edamame, that's two (leftovers from last night's dinner)
Dinner will have broccoli, that's a total of three.
Hmmm, so how do I sneak in two more?
Wait, does a sliced onion count?
Dinner tonight is crock pot country style ribs topped with a sliced onion and bbq sauce cooked on low for 6 hours. Mashed taters (does that count?) and steamed broccoli.

I don't have a single veggie left in the house except for an onion. I really need to hit WMT and the Fresh Market. However, today the plumber is supposed to show up and see if he can fix my bathroom sink stopper (good luck with that, it's been fixed once already). The tree trimmer is also supposed to be here since they didn't show up yesterday as scheduled.
I did find a recipe yesterday for Chicken Taco Soup and I have the ingredients already on my shopping list. It contains 4 different beans and a can of corn. It's also supposed to be gluten free, as I think that may be in DHs future whether he likes it or not.
Didn't mean to completely hijack this topic, but I'll play as soon as I get some veggies in the house.

Lettuce, that funny looking stuff that looks like weeds 2 green onions 3 very large baby carrots Cauliflower florets (4) 4 strips peppers (green, red, yellow, orange) 1 rib celery 2 T Cardini Jalapeno Caesar salad dressing few sprinkles of Frenchs fried onions

Last night's dinner veggies were corn on the cob, fresh asparagus, romaine, radishes, avocado and red pepper! (That's 12 for yesterday!) I got a great deal on fresh corn ... 5 for $1.00. You just can't beat that! That was the last of the asparagus, so I will have to pick up something different when I visit Trader Joes on Thursday. I am thinking edamame. I don't think they have jicama ... the other thing I've been wanting. My tomatoes are still producing well in the garden ... and I've got three pepper plants with peppers turning from green (ick) to colors ... I think they are yellow peppers!

This weekend at my community garden plot I harvested: baby beets, kale, arugula/mesclun, pattypan squash, hubbard squash, French radishes, Thumbelina carrots, 2 kinds of eggplant, Fresno and banana peppers, orange and green bell peppers, cucumbers, spring onions, shallots and 6 kinds of tomatoes.
With them, I've made so far: raw kale salad (shredded kale, shredded carrots, dried cranberries, pine nuts in a sherry vinaigrette); a Greek salad with tomatoes, cucumbers, bell peppers, kalamata olives and feta cheese with a Greek vinaigrette; completely from scratch eggplant parmigiana (okay, I didn't make the cheeses, lol. but I did make the marinara sauce); beet salad (roasted beets on top of steamed greens, dressed with candied walnuts, goat cheese and fig balsamic & olive oil).
Still to come this week: grilled veges (to go with steak on the BBQ); a large leafy green salad to go with chicken or fish; a big ravioli making/freezing session (the hubbard squash blended with cheese, garlic, pine nuts and bread crumbs for the filling); penne with homemade vodka sauce. I also had 5 apples fall off my tree yesterday so I made a quick rustic apple-blueberry tart .
I think I'm getting in at least 5 veggies a day . I love summer in La La Land.

Tue veggies
red onion leaf lettuce boston lettuce collar greens zuchinni olives green onion broccoli mushroom tomato asparagus green beans 12 different veggiea and I did zuchinni twice.
I am getting low on some veggies and Thur is my good produc market day but I will stop at another market today because I could use some more veggies for my chicken stir fry.

On my ham and cheese sandwich at lunch I had spinach, green pepper, tomato and cucumber. For snack I made a crunchy salad with broccoli, carrots, red cabbage, brussel sprouts and dried cranberries with home made poppy seed dressing. I was going to have crackers and cheese, but then I saw this thread. I'm supposed to be getting off the couch and grocery shopping. We're nearly out of veggies.

I've been very bad today. We went out for breakfast. I brought half my omelet home along with the hash browns and had both for lunch. Perhaps I'll have a salad for dinner to make up for the rest of the day.

Lunch had mushrooms and edamame (same leftovers as yesterday).
Dinner tonight - easy weeknight skillet supper.
1.5 cups diced celery .59c a lb about 1/2 # 1.5 cups sliced carrots . 89c a lb about 1/2# about a cup of sliced baby bell peppers, lots of color there! less then 50c (they were 1.49 for 20 oz.) 1 28 oz can of diced tomatoes. 89c 1 diced onion. say 29c
1/2# ground beef at about $2 and 1/2# cavatelli pasta say .60c.
I may peel and slice the kholarabi I picked up at the farmers market this past weekend.
Yummers!

My good, fav produce mkt has (finally - been weeks) a GREAT ad. Bunch of veggies & fruits to buy today. Did NOT buy anything at the one I went to Wed. Guess no one else is either as the lot was EMPTY at 9:45 am & wso was the store.
Does garlic count s a veggie? It does grow in the ground. If yes I can probably add 1 more/day.
Wed veggies - 11 different: onion, broccoli, mushrooms, bok choy, tomato, green pepper, red pepper, yellow pepper, celery, carrot & zuchinni.

How can garbanzo beans count but not hummus? I had celery, cucumbers, tomato and tuna for lunch. We had chicken, zucchini and tomato sauce for dinner. Just guessing but in the same way I don't consider ketchup a veggie? That is an ongoing discussion with DD and me.

Yay! How timely, thank you, ❤ mollymouser ❤! DH and I have recently decided to start branching out by experimenting with new veggies. Yesterday, Iggy had: 1.5 cups fresh spinach (1.99 for the entire bag), 1/2 cup cauliflower (1.00 for the entire bag), 1/2 avocado (1.25 for the entire thing), 1/2 Roma tomato (.67 for 2) and um.... and an olive. LOL! Last night I bought: 2 corn cobs at .20 each and 2 turnips for .66. Earlier this week, new veggies included baby Bok Choy, green onions and beets. I have Clinton Kelly's Freakin' Fabulous on a Budget, and for money savings, it has an in season produce page which I've been following this year.

I went to the farmer's market near closing time and bought 1 of the last 2 boxes of green beans, tomatoes and potatoes. He said he didn't want to take just 1 box of green beans back so he gave me both for the price of 1.

Red and green peppers, scallions, celery, mushrooms, bean sprouts and garlic for dinner. Stir fried with chicken breast.
Twelve!! Plus two fruits, cranberries and cherries.
This is a timely thread since I was just saying I need to get back to meal planning and healthier eating!

How can garbanzo beans count but not hummus? I had celery, cucumbers, tomato and tuna for lunch. We had a one pot dinner of chicken, zucchini, tomato sauce and garlic. If you take whole garbanzo beans and personally make hummus, we will count it. But the focus is on eating actual veggies ... not things (like tomato sauce, tomato soup, ketchup) made by others (commercially) from veggies. If you make tomato soup from tomatoes, then you can count the soup.
