Since it's Sunday I think tonight will be creamed diced ham with sliced green olives. I'll use up some burger buns (if DH will eat it that way).
I cheat as I buy the ham already diced into tiny pieces...but again, I have no idea the cost involved, but my guess per person is maybe $1.50- $2.

I finally did a menu plan for this week early this morning. It is still short 1 night’s entrée BUT I may be going out one night to celebrate a friend’s bday so will just move that plan to the MIA eve. If not I will add a salad plate or sop depending on weather.
2/17 Mon Swiss mushroom turkey burger on a whole wheat thin w/asparagus. Total cost $1.15
Could use some new ideas for cooking a whole chicken.

jbeanie, did you try the recipe? Marion, how did the sesame chicken turn out? And I like your plans for the stuffed chicken recipe. Pleae let us know the outcome. I am so thrilled y'all are trying out some of the things I posted. This really is a fun thread! Lately: Friday: 1/2 free Schlotzy's sandwich after a long day of shopping in the big city. Saturday: Birthday fare including um.... sheesh, I don't think I ate much during my party. I joined a few friends over at the melted dark chocolate crock pot. The chocolate was two packages of Private Selection. Dippers were sliced Twinkies someone brought me (long, inside story ), and sliced up Rice Krispies treats. I was too busy to make them from scratch, so I bought the package of 16 for $5+. I then munched on fresh sour dough and ranch dressing with a gal pal after everyone else left. ETA: One of my friends and I poured alcohol over sliced Twinkie. O.M.G.!!! Yesterday: While shopping Friday, I picked up two Papa Murphy's take and bake using a buy one get one 50% off coupon. I bought two Family Stuffed pizzas for $24!!!! The theory was to bake one for the party, but there was enough other food. I baked one of them last night, and DH has enough leftovers for several lunches. The other I'll bake tonight, slice and freeze. New recipe tomorrow night: Lamb burgers w/ sliced feta and yogurt sauce. $11.48 for the ground lamb and feta, we'll use leftover sour dough from the party, the yogurt was free, and the cucumber is less than $1. So, figure, what, $3.25 a burger? I'll serve w/ leftover fresh veggies someone bought to my party.

The sesame chicken was super yummy! I don't know what it is about me and that stuff but I just love it! Cut back on soy by 1/2 tbs and made up with it in sesame oil. Cut back on brown sugar by 1/2 tbs and made up for it in rice vinegar. Didn't get it quite as brown and crispy as it did the first time since I had so much more in the pan, but it still tasted great. Had some more for lunch and will freeze the rest this evening.
Have a little cushion on my daily calorie goal so I may add some salad in with tonight's red beans. I'm guessing salad greens, tomato, and dressing at about a buck? Still at $2 or less for tonight's dinner.
Will give the stuffed chicken a go next week and will definitely let you all know how it turns out!

Sweet n sour chicken in the crockpot. But, it doesn't look like I'll be eating til 10 PM since I realized at 3:30 it was turned on but not plugged in 1 1/2 b/s chic breast 1.59 lb. a few sliced baby carrots (.99 whole bag) a sliced onion (.99 3lb bag) a sliced stalk of celery a little brown sugar, soy sauce or teriyaki sauce, some pineapple (usually can but I have fresh I'm using) this will be probably 3 meals, and cost maybe $1/serving. I'll make some brown rice to go with it, also cheap, like .25 serving.

I was going to make shrimp pasta tonight but I forgot to take the shrimp out of the freezer before I left for work. So tonight will either be leftovers or a turkey sandwich with salad. If I can *remember* to defrost the shrimp, I will post tomorrow's dinner.

frozen shrimp thaws VERY quickly at room temp or put in collander/strainer & run cool water over for a couple minutes.
2/19 Wed Not sure which is lunch & which is dinner:
Salad plate of romaine, sliced turkey, sliced ham, grated cheddar & italian dressing. Cost less than $1. Leftover roast beef from freezer, baked potato, veg. Not sure of bee cost.
ETA: I froze the whole chicken I bought last week. Think I will wait until I start grilling to do beer butt w/mequite or hickory chips. Instead I'll pull a pkg of 4 breasts out and do 4 different flavors between now & Sun:
italian dressing marinade bbq sauced oven fried lemon, pepper, garlic marinade
That is enough different flavors to keep me from getting bored.

Yes, I have done that before to defrost them. The thought did cross my mind yesterday, but unfortunately that was as far as it got Ended up working out for the best though because I had errands to run after work and then it was a mad rush to take the dogs for a walk before it got dark and started raining. Went straight for the leftovers after the walk. I did pull the shrimp out of the freezer this morning so it will be shrimp pasta tonight. 12 oz frozen shrimp (they used to do these in 16 oz bags, grrrr) - $4.994 oz whole wheat angel hair pasta (BOGO free at about $1.39 a box, and using a third of a box) - $0.252 big handfuls of spinach (BOGO free at $2.49 a bag, will use half a bag) - $0.656 roma tomatoes (got a bag of 10 for $1.00) - $0.604 garlic cloves (half a head, and two heads for $0.59) - $0.15half a bag of frozen sugar snap peas (BOGO free at $2.29 a bag) - $0.601 green bell pepper (got a bag of 4 for $1) - $0.25olive oil or butter - $0.25 ? salt and pepper - nil Total: $7.74The last time I did this I used chicken. I was able to get 4 generous servings even though the calorie count was low because of all the veggies. Per Serving: $1.94I won't freeze the extras from this one. The texture won't be good after it's frozen. So I will have it for lunch again tomorrow. And then have the other two servings sometime before the weekend is over. Not sure what's going to be on deck for the rest of the week either. I probably need to cook at least one more meal after this to get enough variety and then I can fill in with salad/sandwiches/fruits/whatever. Going to have to check the freezer to see what my options might be.

Last night's lamb burgers were "interesting" according to DH. Oh, well. I liked them and there are two leftover. I am going to warm and crumble one up to make a Greek salad for today's lunch. Tonight: I put a chuck roast ($11.53) in the crock pot this morning, added peeled and large diced 3 potatoes (bought directly from the farmer last Friday: 25+lbs for $7.50), leftover celery and baby carrots from my BD party (free b/c someone brought them), 1 can beef broth (.50), filtered water and spices. This will make leftovers plus lunch meat for DH. Tomorrow: Leftovers. Friday: Our usual take out, and I have a coupon for a free appetizer at the local rib joint. Saturday: An annual political dinner at a local resort and they will serve prime rib.

2/20 Thur I 'was' planning on chicken tonight BUT the pkg I took out of thhe freezer Wed took all day to defrost so I still need to marinate some of it which I will do this morning to cook tomorrow.
Plan for tonight is calamari (0.50)w/broccoli (0.10) & mushrooms (0.17) over pasta (0.04)in olive oil and garlic (0.20). Salad on the side (0.25). Costs are true as all recent purchases. Total cost $1.26

Plan on making some tuna salad tomorrow night. One of the ladies from the get fit thread suggested greek yogurt instead of mayo. I'm interested to see how it will turn out. The yogurt is more expensive than the mayo, so I'm really interested to see how it breaks out. Plan on posting it tomorrow.

tonight's my last dinner at home before leaving for over a week. I've been trying to clear things out of my fridge that won't last til I get back. last night I made fried rice with a bunch of fresh veggies and the leftover rice I made over the weekend. I thawed out a portion of shredded rotisserie chicken and mixed it in as well. dinner tonight will be the rest of that fried rice and a grilled pork portion that I pulled out of the freezer last night to thaw. cost - pork portion was about $1 the rest, I don't count b/c it is repurposing leftovers

Iggy - I can't take credit for the yogurt substitution. I had a bit of a .....ummmm...... flop shall I say with a meditteranean style tuna salad and ambellamy over on the get fit thread gave me the tip to swap the mayo out for greek yogurt. It makes it much more calorie friendly (obviously) but she said she can't taste the difference. I'm excited to try it tomorrow and see how the cost of the "healthy" option compares to the "original." chiver - yes, absolutely, repurposing leftovers doesn't count marvholly now has me craving a beer but chicken on the smoker I'll have to keep my eyes peeled for a sale on whole birds. That should give me a little bit of time to see how I can make it calorie friendly as well as pocketbook friendly.

Made a big pot of homemade veggie soup today -- no idea what the cost is. I plan on adding a can of beans when it's almost done.
We are starting the big snowstorm here now so a nice warm soup dinner is right up my alley! Hungarian Goulash I Cost about $25.00but I will enjoy it for two more days. See Main meals...Makes for 8 large servings.. Real Hungarian Goulash does not have tomatoes but potatoes and dumplings!! I add fresh dumping batter daily.
Bruce Here is a recipe for authentic Hungarian Goulash I learned to make from my grandmother and mother who were from Austria-Hungary. Every family has its own version of Goulash. My family would NEVER consider tomatos or green peppers or other spices in Goulash. Some other dishes would have tomato or green pepper, but not Goulash. Slow cooking is the secret and you can never use too much paprika. I like to use 3 tablespoons. Hope you enjoy this dish, I have been raised on it.

4 lb. beef CUT INTO CHUNKS.. YES NICE ROAST LIKE ORGAN ANGUS..BUY PRICE OFF MEET. 0 tsp. salt 2 onions, white or yellow 2 Tbsp. olive oil 4 Tbsp. imported sweet paprika (most important to use real Hungarian paprika for ultimate flavor) 2 bay leaves 1 Qt. water 4 peeled and diced potatoes
4 egg 24 Tbsp. flour 0 tsp. salt Make dumplings daily so KEEP EXTRA IN A COVERED BOWL AT 35 F. Add flour to unbeaten egg and salt. Mix well. Let stand for 1/2 hour for flour to mellow. Drop by teaspoonful into Goulash. Cover and simmer 5 minutes after dumplings rise to surface.
Serve hot with dollops of sour cream. SERVES 8 A REAL NICE FILLING AMOUNT FOR MAIN MEALS.

Marion I use 1/2 may & 1/2 non-fat yogurt in my tuna (egg, chicken, potato) salad. yogurt is CHEAP at Aldi - $1.99/32 oz. i use it w/fresh or frozen fruit & as a replacement for sour cream in any recipe. The whole chicken was on sale for $0.79/lb at a local, independent chain. It now resides in my freezer until it warms up (IF ever). The very nature of the cooking method for beer butt chicken IS diet friendly IF you do not eat the skin.
2/21 Fri The defrosted chicken was only 3 breasts so pkg ($2.68) will give me 5 meals. Dropping the oven fried. I'll have w/kasha & a veg. Kasha recipe makes 3-4 servings. Chicken 0.50 Marinade/BBQ sauce 0.10 Kasha 0.12 veg 0.25
Total cost $0.97
I LOVE it when the cost/serving is $1 or less AND it is well balanced.

That's the problem, the skin is just so yummy, and smokey, and crispy, and sometimes basted with butter while it cooks. Need to rethink my, ummm, "standard" recipe for that. But, 79 cents a lb for whole birds is great. 99 is common here, and 89 is once in a blue moon! Tonight was tuna salad sandwich. tuna - 1 can (got a 4 pack for $3.99) - $1.00 3/4 of a single serve greek yogurt - $0.75 2 slices of bread ($2.50 a loaf, 20 slices in a loaf since I hate the ends) - $0.25 celery salt, pepper, 1/2 tsp olive oil - $0.25 ? 2 eggs - $0.40 Total: $2.65 Will definitely get 2 servings (3 is stretching it a bit), so $1.33 per serving. I get mayo for $2.50 or $2.99 depending on the sale. It's a 30 oz jar, and I would have used about 4 oz. That would have been $0.33 - $0.40 instead of the yogurt. And, I wouldn't have needed any olive oil, so I guess could have saved another $0.10 there. Total for mayo would have been: $2.17 Per serving: $1.09 All in all, the traditional mayo version wasn't as much cheaper as I thought it would be. As far as the recipe, I felt like it was missing something so I added a tad of olive oil and that seemed to do the trick. I think the greek yogurt is a bit too tangy though. I'm going to try plain yogurt next time. I think that will be just right.

Marion The ends of bread become croutons, bread crumbs and/or the bready part of baked onion soup. I toast them & have an old plastic coffee can for saving them. 4 oz is a LOT of mayo. I use 2T mayon & 2T plain, nonfat yougurt in my tuna.
NOTE: I had computer connection issues on Sat.
The kasha I made a few days ago turned out to be 4 servings so a bit cheaper. 2/22 Sat I ate matzo (0.04) & cheese spread (0.10). Really cheap but not very healthy. Unusual for me but I was feeling particularly lazy after my issues getting online and then running nearly 3 hr of errands in somewhat windy conditions.
2/23 Sun I actually did my complete meal plan for the week. Will I get lazy and substitute some deli turkey or Ham? Probably. Tonight is Turkey burger (0.42) and 2 servings of roasted veggies (0.50). Total cost = 0.92

Probably. It's comparable to the amount of yogurt I used. I also have an issue with tuna being too dry for my taste. The sad fact of the matter is 4oz is 1/2 a cup. For one can of tuna and 2 eggs that is completely reasonable for I would normally make. Making the healthier substitutions is becoming more and more important for me. And yes, "healthy" options are more expensive. But breaking it out, it's not that much more. I can work these into my grocery budget without pain, so I really have to excuses to not do it. I use the bread ends for doggie treats. They like them so it saves me the trouble from dealing with them. Tonight I'm making the stuffed chicken recipe that Iggy shared in #196. I'll get all broken down and posted - along with a taste review - later this evening.

Here's tonight's dinner. A variation on post 196 that Iggy shared.
Bacon Ranch Stuffed Chicken 6 chicken tenderloins (IQF bag, 10.99 a bag, BOGO free, half a bag) - $2.75 3oz of greek yogurt - $0.50 ranch seasoning mix - no idea how much since I made it myself so I really can't even guess at the cost few spinach leaves - $0.25 half a red bell pepper - $0.50 6 slices of bacon ($5.99 for 3 lbs, 1oz per slice) - $0.75
Total: $4.75 6 servings: $0.79 per serving (not including the ranch seasoning mix)
Garlic Mashed Potatoes 3 potatoes (15 per bag, $1.50 for a 5lb bag) - $0.30 jarred minced garlic, garlic powder, salt, pepper - $0.15 ? greek yogurt (half a container left over from chicken, quarter a container left over from tuna) - $0.75 2 tbs butter - $0.13
Total: $1.33 6 servings: $0.22 per serving
Broccoli 1 bag frozen broccoli (on sale 2/$4) - $2.00 1 tbs butter - $0.07
Total: $2.07 2 servings: $1.04 per serving
One serving of tonight's dinner: $2.05 (not including the ranch seasoning mix)
The chicken was really good and I will have it again. I used yogurt instead of cream cheese and mixed the ranch seasoning in. Since I'm not low carbbing, I added a few leaves of spinach and then a few matchsticks of red bell pepper before I rolled them up. The chicken tenderloins I used are equal to a half a chicken breast, so I used 1 tbs of "filling" and one slice of bacon per tenderloin. I think the texture of these will freeze well. Plan will be to eat the chicken two more times this week and freeze the rest.
This recipe really lends itself to a lot of different variations. I was thinking some taco seasoning and a spoonful of black beans for a mexican flair. Maybe if I cut back on the yogurt I could add in some sharp cheddar and use a bit of broccoli. Lots of different ways to change the taste on this and it's really easy! I thought trying to roll them and wrap them in bacon would end in disaster but it worked really well. This one's a keeper for me.

Sloppy Joe's. I had made a bbq'd meatloaf. I warmed up the meat with a little bit of fresh sauce, and put it on toasted buns. Yum.

Grits: that is what I call repurposed food & a good use of leftovers w/o getting you (and family) bored.
2/24 Mon Tonight is going to be pasta (0.10) w/veggies (0.26) in pesto(0.50) sauce and salad (0.30). I broke down and bought a jar this past weekend because I LOVE it. Total cost - $1.16.
I have ½ lb black beans soaking for tomorrow. Will cook shortly. Should be 3-4 servings. I’ll probably use 2 this week and freeze the rest.
