Inspired by the State Fair, this weekend I made Brussel Sprouts on a stick and took them to a party. They were a huge hit!
I bought thick wooden skewers that were only 5 inches long from Costco, but I'm sure you could use the regular bamboo skewers.
I picked large sprouts, and washed them off, picked off the nasty leaves. I cut off the bottom stump and then cut them each in half (top to bottom.) I put them on a stick, I could only fit 2 halves on each stick, but if you use a longer skewer, you could do 3 or 4 and I bet they would still sell.
I put a piece of parchment paper on a cookie sheet and laid all the skewers in a single layer, cut side up. I drizzled a little oil, salt and pepper, and then sprinkled some balsamic vinegar over them. You could also dip them in the balsamic on a plate. That would probably be more even. Then I turned them all cut side down. 400 degree oven for 15 minutes, and then turned them over and roast another 10 minutes.
I also made a dipping sauce which was just mayo (about 1/4 cup) juice from half a lemon and 5 gloves of roasted garlic.
Huge hit!

I'm not a huge fan of Brussels Sprouts, mainly because they were usually over-cooked, or blah - but those sound really good!

That sounds really good. I used to absolutely hate Brussels sprouts as a kid because they were always boiled or steamed and just completely gross. I tried roasting them a while back, and they're awfully tasty little things when prepared properly!

That sounds really good. I used to absolutely hate Brussels sprouts as a kid because they were always boiled or steamed and just completely gross. I tried roasting them a while back, and they're awfully tasty little things when prepared properly! Growing up Brussels sprouts were the only vegetable I wouldn't eat. My mother would boiled them until they had completely given up the will to live, and then she would boil them a few more minutes. Then she would drizzle apple cider vinegar over them. Now they are my favorite, we fry them, roast them or grill them, and they taste like fancy cabbage. I love cabbage. They are my kids' favorite too. They are always telling their friends that they just HAVE to try Brussels sprouts.
