I want a baked potato for lunch I had one last night for dinner,. It was yummy. I totally wanted potatoes after that documentary.

But of course...
When I bake my potatoes I rub a little oil on them, and then sprinkle them with kosher salt before putting them in the oven. So the outside gets crispy and salty. I eat the inside all slathered with sour cream, and then eat the skins - it is almost like chips, all salty. So awesome.

I'm actually north irish/protestant. So, all of the pasty-skin of the irish, without any of the fun, drunk, catholic side. You have to remove that beer, given the tee-totaler nature of my heritage. My people are quite boring - prim and proper. I'm a scourge on the bloodline. eh! you must be watered down with english blood...... We're irish - catholic - loads of booze. Give us back our potatoes!!!!! So I'm sitting at a table in The Keg, a restaurant in Larn, about 30 minutes northwest of Belfast, having dinner with some shirt tail relatives. I look around that table and realize that there are at least eight different potato dishes being passed around. Mashed, Champ, Colcannon, Boxty, cheddar gratin, a Dublin Coddle, boiled red potatoes, fries, and more. I like potatoes, but these people reallllllly like their spuds. Where else do you get your choice of two potato dishes to go with your pub lunch, the Irish version of meat plus two side dishes?
