Ingredients: 1/4 cup extra virgin olive oil 1 medium to large sized sweet onion chopped 4 to 600 cloves of garlic thinly sliced 1 6oz can tomato paste 1 1lb, 14oz can of crushed tomato Salt & fresh ground black pepper to taste 1 tsp chili powder (yes, chili powder) 1 tsp crumbled dried basil 1 tablespoon sugar 1 bay leaf
to be enjoyed with 1 lb hot buttery pasta of your choice & fresh ground Parmesan cheese
In a large skillet saute the onion in the olive oil until it is just starting to brown, add the garlic and very briefly saute as it will burn pretty fast (which reminds me- saute it, don't kill it. Med high heat is fine, you should not smoke the oil-- but do make sure you preheat the oil). Stir in the rest and simmer 45 minutes to an hour.
